PORI URUNDAI RECIPE FOR KARTHIGAI DEEPAM

  • Karthigai Deepam is celebrated to worship Lord Shiva in Thiruvannamalai and also to mark the birthday of his son Lord Kartikeya. Here's a melt-in-the-mouth Naivedyam recipe prepared using simple puffed rice, coconut and jaggery as an offering to the deities.
    Ingredients
    Puffed Poha- 2 cups
    Puffed and cleaned paddy rice - 2 cups
    Jaggery - 2 cups
    Dry ginger powder -1tsp
    Cardamom powder -1Tsp
    Fried gram- 3tbsp
    Groundnuts 3tbsp
    Coconut pieces finely chopped -1/4th cup
    Ghee -2tbsp

    Method
    .
    - Clean both the puffed rice.
    -Dry roast them separately and set aside. -Fry coconut pieces in ghee.
    -Roast ground nuts.
    -To one puffed rice add dry ginger powder, fried gram and roasted coconut.
    -To another puffed rice, add cardamom powder,groundnuts, roasted coconut.
    -Add 1 cup jaggery to a kadai and add water to soak jaggery.
    -Melt the jaggery and boil it till a thick syrup is formed.
    -To check the perfect consistency pour a small drop in a cup of water. You should be able to collect the jaggery out of water and it will be hard as stone once it cools.
    -This is called stone consistency.
    -Pour the jaggery to the puffed rice and mix it immediately.
    - Apply ghee in hand and make small ladoos before the mixture cools down.
    -Repeat the same for the other set of puffed rice and make ladoos. -Karthigai Deepam 'Pori Urandai' is ready for Annamalaiyar!
