UMAMI & SWEET EGGPLANT RECIPE ✨
*Servings: 4-6
Ingredients:
1 large eggplant, thinly sliced
1 medium sized carrot, julienned
1-1/2 cups cabbage, grated
1 cup mung bean sprout
3 stalks spring onions, thinly sliced
5 cloves garlic, chopped
2 tbsp soy sauce
2 tbsp mirin (sweet Japanese cooking wine)
Salt & pepper to taste
1 tbsp sesame oil
1-1/2 cup corn flour
For the sauce mixture:
1 tbsp smoked paprika
1 tbsp garlic powder
1/4 cup raw sugar
1/4 cup white vinegar
2 tbsp soy sauce
Instructions:
In a large bowl, put the sliced eggplants and add soy sauce and mirin. Toss to coat evenly with the marinade. Set aside.
Prepare the sauce by thoroughly mixing smoked paprika, garlic powder, raw sugar, vinegar and soy sauce. Set aside
Toast the chopped garlic on a lightly greased pan and set aside.
On the same cooking pan, add sesame oil and saute carrots, mung bean sprouts and cabbage. Seasoned with salt and pepper to taste. Gradually add the sauce mixture whilst stirring the vegetables. Cook for about 5 to 8 minutes.
Transfer the cooked vegetable and eggplant in a plate and garnish it with spring onions and toasted garlic. Served hot and enjoy 😋
