EASY Pineapple Soya Chunks Recipe (Vegan Pineapple Chicken) | Simple Dinner Idea | Frey and Maria

We had some soya chunks in the pantry that we really need to use up, so we cooked it with pineapples, and we also make a simple savory and sweet sauce that goes very well with it. 😋 You can use tofu or soy curls if that's what you have on hand. 😊 This dish is cheap, filling and will be delicious with steamed rice. 🍚💕
PINEAPPLE SOYA CHUNKS ✨
50 g soya chunks
400 g pineapple chunks
2 cloves garlic, minced
1/2 red onion, cut into chunks
3/4 cup red bell pepper, diced
1/4 cup cashews
salt and pepper to taste
cornstarch slurry (mix 2 tsp cornstarch with 1 tbsp. water)
Sauce Ingredients:
1/2 cup pineapple juice
2 tbsp. soy sauce
2 tbsp. hoisin sauce
1/4 cup raw sugar
For the garnish (optional):
chopped spring onions
sesame seeds
Method
Prepare the Sauce:
Combine the soy sauce, hoisin sauce, pineapple juice and raw sugar. Mix them well and set aside.
Soak the soya chunks in boiling hot water for 30 minutes or according to package instructions. After that, drain the water using a colander and set it aside.
In a cast iron skillet, sauté the garlic and add the soya chunks. Season with salt and pepper to taste and let it cook for 3-5 minutes. Next, add the red bell pepper, red onion, pineapple chunks and cashews. Give it a good stir. At this point, you can add more salt if needed. Pour the sauce mixture into the pan and add the cornstarch slurry. Mix it well and let it simmer for another 3 minutes.
Transfer in a bowl and garnish with sesame seeds and chopped spring onions. Serve and enjoy with steamed rice! 😊

We live in Florida and raise our own pineapples, so never buy canned pineapple. What do you suggest to substitute for the pineapple juice?
Hi David, thanks for your message. Any store bought pineapple juice in tetra pack or bottle would do but if those are unavailable you can use 2 tbsp of lemon juice to add acidity to the sauce mixture (adjust the taste accordingly). Goodluck and enjoy making your pineapple soya chunks.
