EASY VEGAN CHILI RECIPE | HOW TO MAKE VEGAN CHILI | Frey and Maria

Who wants a bowl of #VeganChili? 🙋🏻‍♂️🙋🏻‍♀️💕 It’s incredibly easy to make and was so satisfying. 😋 Really good to have in the fridge for a lazy meal and it’s definitely better when it’s homemade. 👌
EASY VEGAN CHILI RECIPE ✨
Ingredients:
420 g canned mixed beans (red kidney beans, pinto beans & black beans)
420 g canned brown lentils
420 g canned diced tomatoes
2 tbsp. nutritional yeast
1 tsp dried oregano
1 tsp ground cumin
1 tsp ground cinnamon
1/2 yellow bell pepper (capsicum), diced
a pinch of chili flakes
1 medium-sized onion, diced
1 vegetable bouillon cube
1/4 cup water
salt and pepper to taste
*fresh parsley (optional)
Method
In a medium-sized pot, sauté the onion and yellow bell pepper. Add the vegetable bouillon cube and brown lentils (drained and rinsed). Add the ground cumin, ground cinnamon, dried oregano and a pinch of chili flakes. Stir well. Add the diced tomatoes and pour 1/4 cup of water. Give it a good mix. Drain and rinse the canned mixed beans and add them to the pot. Season it with salt and pepper to taste. Cover with lid and let it simmer for 5-7 minutes. Once done, add the nutritional yeast and some fresh parsley (optional). Mix it well.
Transfer in a bowl and garnish with fresh parsley. Serve immediately and enjoy with rice or corn tortilla chips.
