As as specialist in value addition processing, my persoective is we Africans do not innovate in our food varieties to make it appealing for other people to get attracted to what we offer. West Africans are now serving nshima in smaller lumps wrapped in plastics ((which is cancerous) so its up us to be a bit more flexible and innovative in our prepararion and diversity we offer even to ourselves. In Brazil, they make chips out of nshiima which is more attractive to non Africans that eating it in our traditional way.
