nless I'm mistaken the Whiteout is Imperial's version of a Wit yeast. That yeast is going to impart a decent amount of its own unique character which is an interesting choice where you're trying to see what you get from this raw wheat ale with the hop tea. Wit and Hefe yeasts will go crazy like that and you usually need a blow off tube! "It's a weird beer." Stay weird! I'm impressed by the variety of things you keep trying. Nicely done.
Up until recently, the yeast character has mostly been hidden by the hops, but as they fade more clove is shining through. We’ll be tasting three takes on this style in BBR soon. Cheers, Don!🍻

I love raw beers, I just recently did a raw mixed fermented Berliner Weisse with 66% containing malted wheat, flaked wheat and flaked spelt and the rest was an old heirloom variety of malted barley. I also mash hopped with whole, aged hops and pulled a little decoction. I did it four years ago and it came out great, so fingers crossed that this will be as good. Ah the beer described by Chris Colby as "Ummm...hehe..ahhh...yeaaah...it's OK." Sounded like a tasty recipe to me but I did laugh out loud at "This one has a lot less of that character that I didn't like". He is nothing but honest.

Nice video! Over in Cologne, the Kölsch tends to be crystal clear. In any case, as a homebrewer I am mostly concerned with flavour, so don’t worry and enjoy ☺️

Every time I throw a recipe together in five minutes - could even be a smash - it almost always turns out good and "disappears" fast. You are right. Sometimes the simplest recipes are the best. Another awesome video guys. Love it ❤! Cheers from PA! 🍻🍺
What temp did you mash it at Steve?
I believe Steve mashed at 150F (65C).
Can I ask you that when you added sugar drop/s to the bottles and sealed them did you keep the bottles refrigerated or warmed them up for re-fermentation. If kept refrigerated was the yeast able to do it’s job?
I left the bottles at room temperature for several days.

I think a Kolsch can be clear but I mean, a homebrewed one doesn't have to be right? Beer doesn't have to be complicated to be yummy, as you say. One of my favorite little styles is Patersbier which is basically this type of beer with a Belgian yeast. I try to suppress the Belgian character so it's there, but subtle. It's the same kind of thing as this Kolsch. Cheers guys.

If you have a local homebrew store, that may be the best place to start. They have equipment and ingredient kits that will make it easier to buy what you need. You can simply double the ingredients and get pretty close. However, your efficiency might be difficult from my stovetop method.
Without beer Belgium is the most boring place in Europe

If you can find some coconut sugar ,try it out ,very unique taste. It is extracted from the the coconut tree leaf, not the coconut. Low glycymic sugar. I find it a very interesting flavor!
Just made a Belgian inspired Single as part of my quest to find the perfect summer "house" ale. I think I found it! My grist was slightly different and I used WY1388 for my yeast. IMO it's the least Belgiany of the Belgian style yeasts. My inspiration came from my visit to Westvleteren and drinking their version. That beer is my favorite beer Abbaye beer. Thanks guys! Cheers

1) Is there a reason/need for a 2 hr mash rest? 2) Why did you chill in the bucket vs. in the AIO?
You can do a shorter mash if you want. It worked for me because I used that time to boil the hop tea without having to rush around. I chilled in the bucket because I didn't want to disturb the grain bed, attempting to use it for filtration of the wort.
