Nothing wrong with your method, slow and steady wins the race
My husband makes wheels like these, he has a jig for the table saw, 15degree angle in the left miter gauge slot same in the right slot. It is a plywood jig with an index mark for the slots. The band saw looks great but the slots are too thin.

Lovely job! I've just started looking at wooden wheels and straight away I've found two fellow Aussies making wooden wheels. Awesome! I like the idea of a drill lathe for this kind of work, as I don't have space for even a mini-lathe, and although some of this can be done on a drill press, some processes are more natural with a horizontal axis. Saved and subscribed.
Great idea honing. Do you just use a snug fit and a dab of glue to hold the wheels onto the axles?
Some sort of PVC glue works fine. I mostly use Titebond 11,
