    I encountered a ton of videos saying kimchi has much more probitic amount than sauerkraut - but after reading around it seems there is no actual study that found such a huge difference in probiotic amount (a few times higher amount in kimchi) so are all the videos here on youtube stating that kimchi has a few times more amount of probitics than sauerkraut wrong and misleading (not on purpose but form neglect) I mean i can see how kimchi might have more amount cause it has more vegetables , on other hand saurekraut is fermented for longer time usually .... i just wonder cause if kimchi is better health wise than i dont want to "waste my time" on sauerkraut when all i care about is health when consuming fermented foods ( the many videos in youtube and articles in google seem to say very clear kimchi is better - but no actual reliable study shows that it seems) (might be a good video idea ... though might take a lot of research) I probably will delte this comment after an answer i find satisfying enough (just so your aware anyone who wants to answer)

    I bought 13.25 lbs of cabbage and stored in the fridge for 7 weeks. By the time I got to making kraut, I had 11 lbs left. So basically, the fridge dehydrated over TWO POUNDS of water weight from the cabbage in 7 weeks!!! 😬😲😳 No wonder I didn't have enough brine. 🥴 I added some reverse osmosis water to make up for it. Thanks so much for the great fermenting videos. ❤😊❤

      No because the fresh mushrooms have the live microorganisms needed to do the fermenting. You could make a sauerkraut with lots of dehydrated mushrooms though since the cabbage would contain the needed microbes for a successful fermentation process.👍😊

    Make sure to eat about same amount of potassium also. About 6 mo into high salt diet my heart starting to palpitate. After research here on ytube what I was missing is potassium. Now I either take supplement or eat more green leafy vegetable or fruit to balance out the potassium level. Life is good again. I'm eating watermelon (high potassium) with sea salt while typing it so good.

    this was super helpful. I got my dad a laser thermometer which he loves for his birthday last year and now he's dabbling in fermentation. its hard to find gifts for him so this was a light bulb moment for me, but I wasn't sure what to get. I was nervous that one of these probes would need to have little strips I'd need to repeat buying but I'm glad to see its just glass!

    Hi, I have a question. I always used to make my milk kefir with UHT milk and never had problems with it. After seeing your video I switched to fresh milk. Since then, my kefir doesn't have the proper substance like it used to have. It is a bit watery and grainy and not smooth and thick. Is this normal for kefir that recently switched to fresh milk after always using UHT milk before? Thanks you in advance for your answer. Your video's are great❤

      Yes a sudden milk switch can throw the microbes off and it takes time to rebalance them. If you weren't experiencing problems, then continue with the uht or wait it out for them to rebalance with the current milk👍
