    I've done this before with lapsang souchong (smoked tea), it gave a nice subtle smoky sweetness to the pork.

    never heard of boiling meat... doesn't it make tough?

      Yes you have and yes it would if you were to actually boil it, but you should instead actually simmer it. There are plenty of boiled (simmered) meat dishes, and it is often done to make tough meats tender.

      @@madless6192 I use sous vide quite a bit for meats, mostly steaks and things I want to give a quick sear to at the end.. but thats only 135-140 F.
