Ricotta Pancakes

Ricotta pancakes are one of my favorite things to have for breakfast, but I save them for when I need something special. I looked at recipes for ideas, and then just came up with my own formula. Use this as a guide. Experiment. You could add a little lemon juice and/or lemon rind to intensify the lemon flavor. Make a fruit compote to top them. Play with it. I think kids will love these, but so will adults.
