  • Amatriciana is one of the four big pastas from Rome. But they Abruzzese will tell you it's from Abruzzo. It's that good that people fight over the rights to claim it. Just a few simple ingredients - guanciale, tomatoes and pecorino cheese plus pasta. The best pastas to use are rigatoni or bucatini. It's simple, but full of flavor and not as hard as carbonara to make.
