The BEST Fried Chicken We've Ever Had!

- On a recent trip to Thailand, Jeremy and the team visited a small local restaurant in the heart of Bangkok, where they enjoyed the best fried chicken they'd ever eaten. It was so good that Jeremy has made it his mission to try his best to recreate the deliciously crispy batter while keeping all of the juiciness of the chicken in tact!
Ingredients
6 chicken thighs and legs
6-7 large cloves garlic
4-5 spring onions
Handful coriander
1 tsp black pepper
1 tsp white pepper
1.5 Tbsp sugar
2 Tbsp fried shallots
3 Tbsp fish sauce
5 Tbsp water
7 Tbsp rice flour
1 Tbsp cornflour
Oil for deep frying

My reference for Southern Thai fried chicken was from Pailin of Hot Thai Kitchen. It's as authentic as it gets.
I think you are missing out by not marinating the chicken beforehand with your fish sauce, sugar, spices and herbs.
I can watch your channel only after I've eaten a meal. This recipe is so great with all that flavor in the batter. Can't wait to try it! Cheers!

Other recipes I have made has you brine the chicken in fish sauce oyster sauce coriander and garlic and a little bit of sugar. I even and a bit of kaffir lime leaves. Let that marinate a few hours and then batter and fry. It turns out very flavorful and moist.

I wonder what would happen if you marinated the chicken parts in a mix of dark soy sauce, makruk lime juice, coconut milk, honey, ginger or galangal, and either Sri Racha sauce or chopped Thai Bird's Eye chilis and a couple whisked eggs overnight? To be sure, it would have to marinate in the refrigerator, but still...

I need to find a substitution for the cilantro, as it has the odd flavor to me that about 5% in the US have.
This is coriander, which tastes a little lemony to me. and not cilantro (which I too dislike).
@@BillyHarvey you need to remember he is using british which is different from American English when he talks about Cornflower it's cornstarch we have coriander seed which grows into cilantro there they use it interchangeably
Thai basil could work. Or maybe just omitting it entirely, up to you how you go about it. There's still a lot of flavour without it! - Lee

Is it normal for fish sauce to stink? My bottle is within date but I took a whiff and smells off.
Yes
It smells bad on its own but it tastes fantastic once you mix it in

Err .. This is nothing like Hat Yai fried chicken as you mentioned in the beginning - I lived in HY for 10 years, would have loved to show you around if you visited. You know when Uncle Roger reviews Jamie Oliver .. I had to put my leg down on this video, usually I love SoW videos - not this.
Great recipe, but PLEASE give actual oil temperatures in a range not just bubble round chopsticks.
that’s how you test how hot oil is when it starts to bubble when you put either a tooth pick of wood chopstick not that hard to do
It would be around 180°c
When the wood fizzes, the oil is around 180 Celsius. If in doubt, use a thermometer to measure 180 degrees Celsius. - Lee
