To help you, I mentioned before that you should be cracking eggs on a flat surface and not the corner or a sharp edge. If you crack it on a flat surface you will have fewer broken yolks and fewer shell fragments in the food.

The almost white stuff that is always there? Those are shredded potatoes for hash browns. Very common breakfast item in the USA.
