    As Your host struggle to explain the content of some dishes allow me to help:

    2:45 Krem z borowików- boletus cream soup: vegetable bouillon, onion, carrot, parsley root, celery root, leek, boletus mushrooms, parsley, butter, cream with 12% fat, olive oil, salt, black pepper
    6:13 3 salads combo: surówka z marchewki (carrot salad), surówka z czerwonej kapusty (Red cabbage salad) and surówka z kapusty pekińskiej (Chinese cabbage salad)
    surówka z marchewki (carrot salad): carrots, apples and depedning on version with or without onions, black pepper and salt lemon juice

      Since you tried Tatar, you should try Kogel-mogel too. Its raw egg yolk mixed with sugar. We do it, when we have eg. a sore throat.

      We also have "Flaki" soup. This is tripe soup made from a cow's stomach. I know that similar dishes are prepared in some parts of Africa. :-))))

      @Julia Sikora I didn't know that. Thank you for the great info. :-))))) Africa is culinary very interesting, but little known in Poland. Magreb is a little known. Of course, you can buy okra or piri piri spices in stores. Culinary Black Africa does not exist in Poland. There are so many regions and countries there. We know nothing about it practically. However, I live in the UK. There are many interesting places in London, but in the provinces there is also a desert. :-)))))

    At last, someone had the courage to try our Polish delicious tatar! (I like to add some maggi to it, or even tabasco if I'm in the mood). Now who will dare to savour the traditional Polish beef tripes (flaki wołowe)? I haven't yet seen any youtuber venture so far yet!

      With tatar at least to shots of vodka should go along. To be honest presented tatar is from rather lower quality meat and it is better when the meat is chopped not blended.

    Polish Tatar also would use nice fresh ground black pepper and horseradish. Basically, the base is good quality ground beef and any condiments are up to taste.

    Bigos - cabbage and sauerkraut as well as sausage and meat - depending on the cook, various additives and types of meat :P Żurek - soup made on fermented flour :P Krem borowikowy - is a cream soup made of mushrooms [boletus]. The "Milk Bar ~ Bar mleczny" has subsidies from the state budget - that's why it is very cheap there :P Tatar - the dish came to Poland together with the Muslims [Tatars] :P

      @@HabeshaTraveler This is a legend not true. This dish has nothing to do with the Tatars. Legend has it that the Tatars kept raw horse meat under their saddles, from which they used to prepare Tartare. :-)))) The name of the dish is probably the result of an association - in the 16th-17th centuries, eating raw meat was considered a sign of wildness, a trait that was associated with the Tatar hordes for centuries. In the nineteenth century, a popular dish served by famous Parisian restaurants was the "steak tartare".

      1. Bigos - cabbage and sauerkraut, sausage and meat - depending on the cook, various additives and types of meat, BUT ALSO DRIED PLUMS OR RED WINE OR TOMATOES - depending on the occasion and preferences. 2. Tatar - the dish did not came to Poland together with the Tatars / Mongols. Poles were only inspired by meat in this way "churned" and shredded, and then eaten raw by the Tatars. The Poles added an egg, pickles, marinated forest mushrooms, onions, lemon juice or vinegar, and only then a dish called, of course, "tatar" was created :)

    Steak tartare (raw) is delicious! Seriously! Good quality beef, egg yolk, olive oil, lots of pepper, salt. And also chopped: onion, marinated mushrooms, chopped pickled cucumber. This is spicy

      There is a legend that this raw steak was brought by the Tatars in the Middle Ages, when they often attacked Poland from the east. That's why it's called Tatar. These Tatars were nomads from the steppes.

    Sper vid! Nex time take a Polish guide though! Mushroom soup - zupa borowikowa made of a most noble wild/forest mushrooms!!
    Legendary Pierogies filled with all kinds of fillings - meat, sauerkraut+mushrooms, cheese +mashed potatos, spinnach, etc
    Bacon/pork grease-based bread spread (smalec)!
    Kompot - a compote - different fruits boiled in water - apples, cherries, pears, etc (rarely cranberries though.
    The bread spreads you've got in Szwejk Restaurant in Warsaw (my favorite too! Good choice!) - white is farmer's cheese based, the pink - spiced pork meat based ("metka")
    Tartar steak - super delicacy! Very filling. Have it only ONCE A DAY, good to follow with white, clear, cold vodka! :) :)
    Etc. :)
    I see you are in Toruń - one of my favorite cities in Poland (birthlplace of Nicolaus Copernicus). Good luck and THANK YOU!

    The best thing about traditional home made bigos is that basic recipe is something that almost everyone knows. Its just sauerkraut cooked with meat and few other things. But every family has their own personal touch to it thas is passed from generation to generation and often constantly perfected in the process. I mean Sectret additional ingredients and different tweaks and so on... If you visit few different houses and you will be given bigos in each of them you wont eat 2 portions that will taste and "feel" the same. Personaly I like for example to add meat from differnt cuts to provide some variety of flavour and texrure... Also Im adding spices like dried paprika and whole grain mustard...

    Just one note. It wasn't a Bigos. You can't eat good bigos in the restaurant. This dish should be heated and cooled for several days. Now sanitary regulations prohibit it. There should be as much meat in Bigos as cabbage. Meat and cold cuts should be of different types. There should also be a lot of mushrooms and it should be seasoned with wine. :-))))))

      @@HabeshaTraveler You can eat kompot as fruit soup served in hot days. Basically you add pasta to the kompot, some cream and serce it in room temperature or slightly chilled. The best imo is one made of sour cherries or plums.

    Raw meat "tatar" is my fovourite, but I use no egg yolk, instead I use linen oil, chopped Polish pickles, lots of chopped onions, garlic, sweet paprika, domestic herbal pepper, Maggi. Meat must be grinded beef sirloiner or if someone has an access to horse meat but I never eat horse meat.

      Napoleonka, Wuzetka, Ponczowe. If you go for cheese cake then try not baked one but chilled with variety of dried fruits.

    1:25 your friend mixed chickpea paste (or just hummus?) with smalec aka lard. you can say that bread with smalec is polish amuse-bouche like bread and butter

    Only thing I can say... Comercial dishes have nothing with traditional Pols food _-_ You need to go for some Agroturystyka in a smal tawn :) THan you can tell whats good ;)

    Tatar is served raw and some people like it. Bigos is very traditional in Poland. Also Flaczki, Barszcz and Zurek. Pierogi is a dish but some use it more as a desert if its made sweet. You should visit Polands mountains and taste Oscypek or Bundz. You should go and buy it from a real Bacowka or else you risk getting a fake oscypek. Also in Polish mountains they have more regional foods that you won't find any other place in the world.

      @@HabeshaTraveler Pyzy z zawijanymi zrazami w sosie grzybowym, bitki, leniwe( kind of gnocchi but instead of potato quark cheese is used in making dough) served with browned bread crumbs, melted butter and brown sugar, knedle ( potato dough filed with plums) served same way as leniwe.

    Michele is amazing I dont know him but he is good ambasador of Polish food, he even speaks Polish, the girl is wonderful as well. still they go for in my opinion not the top notch kuality good taste Polish stuff, still it is ok but you know what I mean
