    Ingredients
    4 tbsp olive oil
    1 onion, diced
    5 garlic cloves, minced
    1 bell pepper, diced
    Salt and pepper to taste
    1-2 tsp of cumin
    1-2 tsp smoked paprika
    1-2 tbsp chipotle peppers in adobo
    3 chorizo sausages, sliced into rounds (optional)
    1 28oz can diced tomatoes
    ½ cup tomato paste
    5 eggs
    1 bunch of parsley
    10 small pitas or naan breads
    1/2 cup feta crumbled (optional)
    Instructions
    1) Heat olive oil in pan over medium heat
    2) Add diced onions, pepper and minced garlic.
    3) Season with salt and pepper to taste. Add cumin, paprika and adobo to your preferred tastes.
    4) Sauté for 5 minutes until onions are translucent.
    5) Add sausage rounds, tomato pastes and whole can of diced tomatoes with juices.
    6) Mix and simmer for 2 minutes
    7) Add eggs on top of tomato mixture, cover with lid and simmer on medium low until eggs are poached to desired consistency (about 8 minutes for soft yolks).
    8) Top with herbs (I used parsley)
    9) Enjoy with grilled pita or naan bread.
    Note: you could top this with feta for even more flavor!
