WOW, you made a lot of changes, on my swap I am on a no-money budget, LOL yesterday my 17-year-old daughter and I took off the 66 Chevy Step-side cab and front end together with a Ford backhoe tractor and placed it on a 2000 Cadillac Escalade chassis with the 5.7 Vortec, used a 4-point lift two straps to the front and one through the cab door openings, the hardest part was the alinement with the frame, used for stands on the 66 assembly and squared it to the frame. The cab frame mounts on the 66 cab line up with the frame within 1 of center in on each side of the 2000 Cadillac Escalade chassis frame rails. The front end is where I see I am going to have to do some modifications as they are a lot narrower. I was worried about the steering driveshaft alignment until I saw your solution was a "knuckle" I will be contacting you on that for sure, also the bed mounting solutions were great to see, my problem is I have a long step bed and I am going to have to shorten it to the present wheelbase, the spacers you made for the rear fenders looks expensive, I am thinking maybe offset wheel rims may be the solution for my build.
