I saw an article written by a chef about the secret to good steaks. It was pretty simple actually. Rub it good with butter. Start grilling. Flip it and and brush on more butter. Flip it and brush on more butter. When in doubt, use more butter.

Butter is not needed on steak. Salt enhances the beef flavor, everything else changes it.

Hi Emerald, like your rings. I use to make those turquoise and silver rings and necklaces at a neighbors boot/saddle and western shop back in the day. I must have made and polished a blue million of these. It was a big going on in the day. His store was in a very small town in Central Ohio. It was the largest building in that town and people came from everywhere to purchase his goods. If it had been in a city I wouldn't have gone anywhere near it, rural is where I stay. Em you have done a good job watching your Father, and particularly, Grandpa. Your have learned a lot. Not a surprise as all of you are bright. Those are big, thick chunks of meat. Usually, they have to be cooked low and slow to make them cooked all the way through at the done that is wanted.

As long as they're warm in the middle they're perfect. The longer you cook a steak, the more reason you should have went with chicken.

@@cgrimes72,I have to agree, I use a probe type thermometer thatâs an instant read and a take them off at 125 degrees and let them rest a bit. They come out perfectly done at medium rare every time.

I'd invest in an instant read thermometer for checking doneness. Thermapen is probably the most popular one but a bit pricey unless you catch a good sale. Amazon has a lot of instant read thermometers starting at $20 that would work just fine. I think folding is best for instant read.

I cheat and use a good electronic Blu Tooth grill thermometer. Really liked the narrative about who cooks what when. ha ha. That was good. I'm a full spectrum cook, but yeah, the 'guy at the grill' thing hits a lot of folks.

You might want to get one of those thermometers that read the temps in meat as it's cooked.

Sear marks and crusts are the reason to grill. Cooking can be done any way you want. If you want simplicity, boil your steaks. But like you said, in grilling, it's worth the wait.
