      Yeah stainless steel pans are kinda expensive but cast iron skillets are literally great for chefs on a budget. You just gotta take care of it properly.

      What most cultures consider "poor people food" is also typically the best food that culture produces. Look at nearly every national dish, they're all poor people slow braised old world style dishes. And they're bloody fantastic to eat. Or the dishes are very simple because most old school poor people had tons of farm chores to do. Poor people food is the best in the world. Learn some of these dishes, jerk chicken, rice pilov, stroganoff, American chili, tikki masala etc.

    sooo i'm making all this right now. prepping most stuff. date will be here in 3 hours. i'll keep ya updated.
    update:
    welp, no sparks. but the food was incredible and we still had a good time.
    defs worth it!
    order of things, if you wanna try it yourself:
    takes about 1 1/2h if you are rather inexperienced like me.
    at first i made the chimi-churi, then i rolled the chicken. after that i threw the pears in the oven. when they were almost done, i started frying the chicken.
    pears out, chicken in.
    while the chicken was in the oven i made the cauliflower puree and the tomatoes for the toast.
    assembled the toast right before the date arrived, left the chicken in the oven with an open door (turned off, of course) and put the pears on the lowest flame on the hob so they stay warm.
    toast was eaten, plate up the chicken, after that plate up the pears.
    everything was ready and good to go.

    I forgot to mention, these recipes look amazing... but for a date night, how do you get all of that done in the span of one meal and also be able to sit down and enjoy it when each course is ready? Do you eat your course as you're prepping the next? Like you said, your food got cold by the time you ate it. I'd like to see how you cook multiple things at once, time your steps, do prep work ahead of time. From your other videos where you talked about your experience working in kitchens, I think your ability to manage multiple dishes at once would be valuable to a lot of people!

      Everything can be prepared ahead of time! The only important things is keeping some elements over heat or in the oven on low heat, and to prepare the chicken so you can put it in the oven as you serve the first dish, its ready when you finished the toast and since you´ve already got everything ready (like the puree, chimi and the chicken in the oven which should be done by this time) you literally just cut the chicken and plate up!

      Cause not everyone even drinks wine on dates. Some people drink champagne, or seltzer or other kinds of drink. Some just drink water.

Thanks for sharing this one Josh, it's been hard for my wife and I to have a date night during COVID, as I'm a two-time cancer survivor and have had to take extra precautions.     What I like about Josh is shows how everything is cooked back to ingredients, particularly bread. Most of us don’t have the time to spend 2 days resting a dough, so just go and buy it lol. He shows by knowing proper cooking skills and demystifying many of these, it is possible to eat very well , fresh, for much less.

    First off, I love the recipes provided here, I can't knock that. I have seen so many cooking videos that us price per serving, and not providing a more realistic cost of buying each ingredient from your grocery store / farmer's market. Is it deceiving? kinda, but I totally get the point of these videos - you can make great food on a extreme budget and is possibly better than eating out.

      On the other hand, keep in mind that you can use the leftover ingredients for other dishes. Sure you might have paid $40-50 if you didn't have most of the ingredients, but if you make sure to use all the leftovers, the remaining $25-35 are basically a credit toward reducing the price on your other dishes.

    Made this today. Fantastic recipe Joshua.
    I used chicken breasts since I was too lazy to cut up legs on Friday night. I should've stayed closer to 15 mins (juicier) than 18 mins in the oven (ended up being 185C) but it was still delicious.
    The only modification I made was adding a piece of prosciutto in the middle since I had extra in the fridge. It provided a nice kick of saltiness but was still balanced with the chimichurri.

    I like the diversity of not always being in the cabinet! I would also trim your outro, or move your summary to before the B-Roll goodness so you can end on those beautiful notes.

    I made this last night and it was absolutely divine! Definitely impressed my fiancé! The pears were really tummy too but holy hard candy mess...I did something wrong. The sugar hardened too much. I will try it again and maybe add some rum. I work better when I’ve had a shot lol!!

      You might’ve not added enough butter, at least that’s what i think could be the problem. It happened to me when i tried to make caramel syrup for another recipe. Did not try the pears though might try them for a dinner soon!

    Josh, my wife and I (29 years, happily married) are big one-pot-meal fans. However, this special dinner menu peaked my interest and made it for my wife - just because. I don't consider myself a "cheap" person, but the combination of ingredients and flavors described sounded great to me. This morning I baked a few sourdough breads using the recipe you made with Babish. Yes, that one, and they turned out great. The dinner was absolutely great, my wife and I absolutely loved it, and it was worth the effort it took to make. Thank you!
