so ngl I tried this and I loved it, the only thing I kept doing was forgetting about the potatos in the oven so I burnt them once XD but other than that... I love how simple but amazing this recipe is. its not overly complicated, and it was prepared with readily available ingredients that aren't going to break the bank on cost. really loved this one

Hello Mike, simple but nice recipe, I would add white wind deglazing to sauce, and also cook fish with thyme and finish with butter and lemon emulsion;)

I just did not understand only one thing; pouring stock directly on hot oil; and firework does not start :) ? Is there any temperature requirement to be met for oil and stock on that very combining moment? (I mean for fondant potato)

Hello Chef , few days ago I made a pork tenderloin dish and I used your baked apple purée with balsamic vinegar, baked parsnip root in papillote and glazed with vinegar and honey in the end and potato fondand method with home made chicken stock and the result was fantastic ! Great techniques you show here !
