My favorite way to use beef heart is cut it into cubes and use it for beef stew or curry.

Heart is the most difficult cut to cook properly, it's the thoughest for sure, even if you cook it for one hour or just 10 min.

it's so raw you could put a bandaid on it and it will start pumping blood again
if you're going for tender from sous vide, you'll need more than just a few hours, I would say about 6-8 hours minimum

I wonder how it tastes. I thought heart and liver were the same thing. I find beef liver to be repulsive. But when i think about it, heart (and tongue) is mostly muscle, like meat. However, i like beef tongue. Does it taste like beef tongue?
Not really It kinda have a strong taste similar to liver
