Ube Cake with Cream Cheese Frosting

  • Hello all!! Today I am bringing you a recipe for ube flavoured genoise sponge cake. The ube is a purple yam originally from the Philippines and has a mellow, nutty, vanilla-like flavour. Traditional ube cakes are made of chiffon sponge with addition of ube jam. There are various ube cake recipe online that are authentic so feel free to check them out. :)
    I tested this recipe multiple time and decided to go with genoise sponge base instead of chiffon base. The ube extract I used in my video gives sufficient ube flavour and amazingly vibrant purple colour.

    Ube Sponge Ingredients:
    4 Eggs
    100g Sugar
    120g Plain Flour
    30ml Unsalted Butter
    30ml Milk
    1Tbsp Ube Extract
    1Tbsp Ube Powder (Optional - You can skip this if you can't find it)
    Sugar Syrup(1:1 ratio)
    400ml Whipping Cream
    150g Cream Cheese
    4tbsp Condensed Milk (OR to your taste)
    1Tsp Ube Extract
    Instruction:
    1. Cake: Preheat oven to 160C. Prepare tin 6 inches.
    2. Whip egg and sugar on medium speed until ribbon consistency, whip on low speed to remove air bubbles.
    3. Sieve in flour in 2 stages and fold gently until combined.
    4. Warm the milk and butter in the microwave and mix in ube extract and ube powder.
    5. Add 1-2 scoops of batter and mix well.
    6. Pour the mixture into the main batter and fold gently until combined.
    7. Pour the batter into a 6-inch lined tin and bake at 160C for 35-40 mins.

    Hello there, I like your cake layers that they are kind of dense but still spongy, but when I made this receip and 320f which is 160 c it came out a little undercooked , but I had in oven 40 minutes and also it became 1 6” cake, any advise, thank u so much

      I don't use any stabilisers as the Double Cream I use is very firm. I use elmlea double cream, if you can get your hand on it, I recommend using it.😊

      Always natural light.🙂 But I do wish I had a ring light.. atleast the lighting would have been consistent throughout the video😔
      I use Sony A6400 for my videos.

    Hi this looks beautiful and delicious! 2nd to comment! 😍 May I know should we use cold whipping cream and cold condensed milk here? And is the cream cheese cold also? is plain flour the same as all purpose flour?

      Thank you!!💜 Yes cream should always be cold if you want stiff peaks. Same with cream cheese. Condensed milk can be room temp as we are only adding a little amount😊😊

    Tried this just now. what a waste of time!!!! The bread didn’t rise at all!!!!!! you should put use a self rising flour.
