UBE CAKE ( PURPLE YAM CAKE) with CREAM CHEESE FROSTING

  • This Ube (purple yam) cake is unlike any other cakes you’ve had before. The cake is very moist and is perfect with this light and fluffy cream cheese frosting.
    * You can easily double this recipe if you need to make a bigger cake.
    FULL RECIPE:
    UBE CAKE:
    4 eggyolks
    1/4 cup sugar
    1/4 cup vegetable oil
    6 Tbsp milk
    1/4 cup ube halaya (purple yam jam)
    1 tsp ube extract
    1 1/8 cup cake flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    4 eggwhites
    1/2 tsp cream of tartar
    6 Tbsp sugar
    CREAM CHEESE FROSTING
    1 (8 oz.) cream cheese, softened
    2 cups heavy cream
    1 cup powdered sugar
    1 tsp vanilla extract

    Made this cake today and it was so moist and airy. I love it! Instead of adding 1/4 ube halaya, i added 1/2 cup since my ube halaya doesn't have a strong flavor (using a jarred one). The cake wasn't too sweet either. Thank you for this recipe. I will make this again and again 💕😊

      Yes, you can but it is advisable to use gel food coloring.

      Hello! Thank you! I used Aldi’s brand heavy whipping cream. But any brand will do, just make sure to get the higher fat content. Don’t use the low fat heavy cream coz it doesn’t whip that nice. 😊

      @@Rosebay214 I just guess the measurement but I'm sure you won't mess up if the ube halaya is thicker consistency. Ube halaya 1 cup and whipped cream is 1 and half cup. It is better to use the liquid form whipped cream not the powder one.

      Hello, I don’t think Nestle cream/ all purpose cream can hold its shape when you whip it. You really have to use heavy cream for this recipe.

      Hi, you can however you need to make it into a jam first because it will be more flavorful because the jam has milk, sugar and butter. Another option is: you can buy the bottled ube jam in Asian/ Filipino stores if you want don’t want to make the jam. Hope it helps. 😊

      Hi, you can rehydrate ube powder to make ube halaya. (Follow package instructions on how to rehydrate.) You need the ube halaya to make this ube cake recipe. If you just add ube flavoring and not ube halaya, it will change the consistency and texture of this cake.

    What is the size of ur pan? Is the frosting stable for hot/hummid weather?

      Che Pot I used ( 2)6 inch cake pans. The frosting will be able to stand the humid weather for a couple of hours. However, since it uses mostly dairy products, I suggest keeping it in the fridge and just taking it out when you are ready to eat it.

      Hello you can make your own cake flour with this formula:
      To make 1 cup cake flour : Measure 1 cup of apf, remove 2 Tbsp then add 2 Tbsp of cornstarch. Hope that helps. 😊

      Hello, I haven’t tried using creme fraiche for this recipe. Creme fraiche tends to have that sour taste to it. If you can find heavy whipping cream/ whipping cream that will be a better option.

      YSG Kitcheneria i did. It was okay when i put the base for frosting. I think because i put it in the cakenin the freezer to settle the base forsting to get hard and the remaining frosting in the fridge for like 10 min. After that the remaining frosting went liquidy texture. :/

      Almond Villafria I couldn’t think of any reason why it would be liquidy. I was thinking maybe you used table cream or all purpose cream instead of heavy cream. Or you didn’t whip it until stiff peaks. Or maybe you accidentally measured ingts. wrong. I’m sorry, I wish I can help you. If you have questions, I’m still here to answer them. 😊

      YSG Kitcheneria i did uss 33% heavy cream and used my stand mixer until it reached the stiff peaks. I was gonna make one again but i realized i only got 1package of 8oz cream cheese at the fridge

    You cut both of your cakes in half making 4 layers on the cake, so where did you get the crumbs from? did you bake a separate cake for that?

      G!selle No I did not, I just trimmed both the top of the cakes. Since it is not as flat as I want them to be. Then I used the trimmings as crumbs.

      Kristine Camille Dacio I used (2) 6 inch cake pans. You can use an 8x3 pan however your cake will be smaller/ shorter in height. The cake will be similar to a loaf but still going to be delicious.

      This whipped cream cheese frosting recipe is stable enough to be at room temperature (not hot/ humid) for 2-4 hours. It is not safe to leave cakes with frosting that contains dairy products for more than 4 hours. I hope I was able to help you.

      hello, I haven’t tried using pure blends ube powder. You need to rehydrate the ube powder before using it for this recipe. After mo marehydrate, same quantity listed in the recipe.

      Yes you can make your own cake flour. For every 1 cup of APF, remove 2 Tbsp. then add 2 Tbsp of cornstarch. You now have 1 cup of cake flour. Happy baking!😊

      Jyllel Cabillar yes, you can use ube flavor/ extract. No, caster sugar is a bit coarse than powdered sugar, your frosting will be grainy.

    Hi question, I'm currently making it now. Sadly the frosting isn't going to stiff peak :( I followed your procedure. I'm also using handmixer and resting it every 5mins. There are fat build up now but I've been mixing it for an hour, still it's not yet stiff wtd :(

      Janine Berroya Hello, did you use heavy cream/ whipping cream? If their is fat build up, you’ve overmixed your cream. It should not take that long to whip it to stiff peaks.

      @@YSGKitcheneria after softening the creamcheese, i gradually add the whipping cream, it became soft. That is when i added the powdered sugar, and then it started to become watery 😔

      Janine Berroya 35 % fat will still whip nicely. Do not use all purpose cream/ table cream because it is totally different from heavy cream.
      It helps if you chill (not freeze) the heavy cream before whipping.Try freezing the bowl and whisk attachment you are using for 5-10 minutes so everything will be cold before you use them.

      jenny robaro hello po, yes po you can yse ube powder if you don’t have ube halaya. You just have to rehydrate the ube powder before using it. Once rehydrated, you can use the same amount as ube halaya.

      cjeannewcjn No, cake flour is softer in texture and whiter in color. You can make cake flour, by using all purpose flour. For every 1 cup of APF remove 2 Tbsp of apf and add 2 Tbsp of cornstarch, you now have 1 cup of cake flour.
