Best Claussen style Fresh Pack pickles

  • The Best Claussen style pickles - Garlic dills and Zesty garlic dills, like Claussens but better!!!
    recipe for 4 quart jars packed of pickles.
    Brine:
    1 qt filtered water
    1/2 cup Distilled White Vinegar
    1/4 cup Apple Cider Vinegar
    3 Tbsp Sea Salt
    1.5 Tbsp mustard seed
    1 Tbsp Dill Seed
    1 Tbsp white sugar
    1 Tbsp black pepper corns
    1.5 Tbsp dried minced onion
    1 tsp Turmeric
    3 large cloves Garlic chopped
    1 Jalapeño sliced (For Zesty style)
    combine all into sauce pan and warm on stove until light whisps of steam appear. Remove from heat and let brine cool to room temperature.
    2 bags Salad or Pickling cucumbers
    1/2 cup White vinegar
    2 gallon water
    combine water and vinegar, and dump Cukes into mixture to wash and clean cucumbers.
    Trim ends off cukes and cut into halves or quarters.
    pack Quart jars with cucumbers, and fill tops with slices. Add Garlic evenly & (Jalapeño slices) to jars.
    ladle in spices first evenly, then fill with cooled brine until full. flip jars a few times to distribute spices and garlic.
    Put jars in Refrigerator for 4 to 7 days, then eat at will and enjoy😋

    Great tip about saving the extra brine for when you take a pickle out of a jar. Seems like common sense but it certainly is a great tip

    This was so easy on the eye to watch. I recall preserving pickles/gherkins when the children were young. Hundreds of jars. This portion would suit me more now. Great recipe. Will try it. 💖 👍 🇳🇿 🙋‍♀️ 🇳🇱

      Im a pickle junkie, I have gone through 9 quarts/liters this Summer already. I worked on this recipe for a couple years to get right. If the pickles are too salty you can add a little water to the jar, it cuts it quick with a very small amount. Or you can add salt if you like more, or more vinegar. Its a very easy to adjust recipe 👍🏼🍻

    Going to try this recipe later today. What is the purpose of washing with water and vinegar?

      Washing takes the anti bacterial and preservative sprays off the burbanks that they get from the shipper. Less toxins to the body.
      *** Just a note, these can be a bit salty for some, so if you want to hedge your bets, use 1 Tbsp less salt for the initial brine, and if they need more salt after 4 days in the brine, you can add 1/2 tsp salt to each jar and shake a couple times in 12 hours to up the saltiness.

      ​@@2AChef-n-BBQJust finished canning some with your recipe. I also bought a jar of Claussen to compare and I noticed that they don't cut their blossom ends and their pickles are still crispy. So I'm wondering if that step is really necessary. Have you tried both ways?

    It didn’t make enough brine to fill my jars. 1 quart equaling 4 cups for the water. I double checked the recipe.

      Try adding cucumbers, a quart of brine, brining nothing but a jar creates No pickles🤦🏼‍♂️

      Turmeric is a great antioxidant, adds color and those essential oils hold the pickles without being lost in the brine

      TPC kept taking people to Tournament Players Clubs Golf courses and because my tag in the search engine is frim the original channel name..."Musiclogic", that tag didnt link with TPC Cooks, do people have always had trouble finding my channel. I get messages every week about it, so I took it back to the original, both to make it easier to find, and because I am working to separate myself from groups I dont want to be associated with. Im exhausted with all the BS artists and suck ups. Just looking to be more of an individual than part of a bad crowd. Ive worked very hard at developing and broadening my ability to share proper recipes that anyone can follow and demonstrate them in a concise manner. Chef first, cook second and bbq guy 3rd. Too many are just looking for smoke to be blown up their skirt no matter the outcome of their cook, I want people to know my recipes work and theyvarent that hard.👨🏼‍🍳😁🎸

      @@2AChef-n-BBQ ...I know, and I understand. I don't want to be part of a group either. I need to get away from doing shout outs, but every time I think I am done, I see someone giving me a shoutout. Or, I will even be asked to give a shout out! For real! The BBQ/smoker stuff is great, but many of the channels are going to suffer a level of being burned out because they ran out of stuff to share on their channel when they already did pretty much everything during the winter months. I do a culinary channel for the most part, it could be anything from making Kool-Aid to Puff Pastry Dough! It is unlimited as well. The most successful channels on youtube are not a part of a group, or a major collaboration, and don't do much shout outs if you ask me. They are that way for a reason.

      True. Summer drives me back to guns and woodworking. Doing a bunch of knives and cutting boards, was out shooting this morning, not doing a lot of cooking right now that I wanna make videos of. Im exhausted with the BBQ folks its the same clone stuff, there is little creativity. 😝🤦🏼‍♂️
