Quick Garlic (claussen) Pickles

  • Hi, everyone!
    We love pickles here. And, we really love claussen pickles. My first 2 months of gardening season, I spend impatiently waiting for my first cucumber harvest. lol
    I've tried many recipes over the years, but this one is superb.
    Recipe:
    This recipe is for 10-15 pickling cucumbers.
    You'll need:
    10-15 pickling cucumbers
    1 quart tap water
    1/4 cup distilled white vinegar
    1 tablespoon canning salt (or sea salt)
    1/4 teaspoon mustard seed
    1 teaspoon black peppercorns
    2 teaspoons dried or freeze dried dill
    2 garlic cloves
    Sprinkle of red pepper flakes (for real claussen pickles)
    In your quart of water, add your vinegar and salt, and stir until the salt is dissolved.
    In your (quart) pickle jar, add the dill, garlic, mustard seed, peppercorns, rd pepper flakes, (and 1/2 teaspoon pickle crisp if you use it).
    Take your cucumbers and slice off both ends. This ensures your pickles won't be mushy, and that your brine won't end up cloudy.
    Slice your cucumbers in rounds, spears, halves, or whatever you prefer.
    Put all of your cucumbers in the jar, filling it to the neck of the jar, only. Then pour your brine over your cucumbers. *Do not fill to the top. Fill only to cover all of the cucumbers, leaving the neck of the jar empty.
    Leave your jar open (put a paper towel or coffee filter over it), or just make sure you leave the lid off slightly so that air can escape the jar.
    Put the jar on your counter for 24 hours. After 24 hours, leaving the lid off, put the jar into your refrigerator for another 24 hours. After that, put your lid on tight, shake the jar up well, and you have delicious pickles!
    The flavor will continue to get better over several days, and these pickles will last about 6 months in the fridge.
    **If you just want to make your own pickles but don't have a garden, you can (in many grocery stores), buy bags of pickling cucumbers in the produce department, to take home and make pickles out of.

      If you do use the second video, just remember to split your peppercorns, dill, garlic between the 2 jars instead of all to one jar (bc I only made one jar in the video).

      I'm going to make another video for a full quart of these pickles, today. I just came from harvesting maybe even enough for 2 quarts. My yard is a disaster from all of the terrible weather we've had this last week. But, as soon as I get (at least) the limbs picked up while we have a break between storms, I'll get back inside and get the video made and posted.

    You basically have cucumber kimchi. I don’t use vinegar but I use green onions, garlic and a bit of red pepper and then the salt water and a tiny bit of oil to keep the solution covering the cucumbers. I can add a bay leaf to keep it crisp or you can use grape leaves. Because of the oil and thinner slices it can be ready in a few hours and then refrigerate it when you see a color change. I p[refer to put a bag in the top of the jar that I add water to and seal so all my cucumbers are covered in the water. You can do cauliflower or carrots and only use the salt/ water solution but the salt to water is the most important to cure it and not have it spoil. If you need to you can use a clean rocks on top of the bag or something of glass of ceramic instead of the sealed water bag. Don’t use wood unless it is wet and can’t expand any more unless you want a broken jar. It is best to set you container in a container like a 8” glass pie pan so that if it overflows you don’t have a mess all over. Do expect it to bubble over and this will make clean up easy. Have fun ans you can do cabbage this way too or even Chinese cabbage to make kimchi.

    Awesome and thank you, i just want the juice. Do you know if Claussen boils their brine, lets it cool and then pours it over the pickles ? Also Claussen does not have dill floating in the jar, so did you add that. And finally Claussen does not use whole cloved garlic, they dice it, so do you think you would get more garlic taste by dicing it up like the original ? Im sorry for all the questions, im just looking for an exact duplicate of Claussen dill pickles, due to cancer i cannot eat food anymore but i can drink pickle juice, so i want to make a gallon of it lol

      That's okay! Thank you for the questions. :) Claussen doesn't boil their brine. They actually use dried garlic and dried red bell peppers. And they also add turmeric.
      And their pickles are always refrigerated, so they're not technically in a brine. I'm just not sure what else to call it. Lol
      These taste closest to claussen of all the pickles I' make. I absolutely LOVE claussen pickles.
