NEAPOLITAN PIZZA MADE WITH FRESH YEAST (DIRECT METHOD)

In this video i'm making a very easy recipe for Neapolitan pizza dough with instant fresh yeast.
There is two method that you can do to make your pizza dough, the first one is direct method made with fresh yeast, or instant dry yeast and the second one is indirect method made with preferment such as poolish, biga or sourdough.
This recipe is very easy to do for you guys who just started to learn the art of making Neapolitan pizza :)
Dough recipe:
- High protein flour / 00 flour - 500 gr
- Water - 350 ml
- Fresh yeast - 1 gr
- Salt - 12 gr

Well if you live in a warmer climate it would be good to use cold water

Yes right now weather is 40 °C to 44 °C. But room temp is 28°C as I keep the AC on. So what would be the ideal water temperature
