    Crispy Fried Eggplant
    Ingredients for batter:
    All-purpose flour 2 cups
    Salt 1/2 tsp
    Red chili powder 1 tbsp
    Chili sauce 2 tbsp
    Water as required
    Black pepper powder 1/2 tsp
    Ketchup 2 tbsp
    Ingredients for Gram Flour Batter:
    Gram flour 2 cups
    Salt 1/2 tsp
    Red chili powder 1 tbsp
    Turmeric powder 1/2 tsp
    Water as required
    Coriander powder 1 tbsp
    Red chili flakes 1 tbsp
    Ingredients for Chili Mayo sauce:
    Mayonnaise 1 cup
    Cream 1/2 cup
    Ketchup 1/4 cup
    Chili sauce 1 tbsp
    Salt 1/2 tsp
    Black pepper powder 1/2 tsp
    Ingredients for Crispy Fried Eggplant:
    Eggplants as required
    Water (for soaking) as required
    Corn flour as required
    Bread crumbs as required
    Oil (for frying) as required
    Liquid batter as required
    Gram flour as required
    Directions for liquid batter preparation:
    1. In a bowl add flour, salt, red chili powder, chili sauce, water, black pepper, ketchup and mix well. your liquid batter is ready.
    Directions for Gram Flour Batter Preparation:
    2. In a bowl add gram flour, salt, red chili powder, turmeric powder, water, coriander powder, red chili flakes and mix well. your gram flour batter is ready.
    Directions for Chili Mayo Sauce Preparation:
    3. In a bowl add mayo, cream, ketchup, chili sauce, salt, black pepper and mix well. Your chili mayo sauce is ready.
    Directions for Crispy Fried Eggplant Preparation:
    4. Take eggplants and cut them into fries shape. Dip them in water and soak for 15-20 minutes. Now pat dry them.
    5. Now coat the eggplant in corn flour and dip in liquid batter. Coat them in bread crumbs and deep fry them until light golden and crispy.
    6. Take other eggplant and dip them in gram flour batter.
    7. Deep fry them until golden brown in color. Serve them with mayo chili sauce and enjoy.
