Next video, let's have them correctly make steak:
1. Use high temp oil, not butter (unless basting) like avocado oil, the burnt butter gives a bad taste (and kinda color) to meat.
2. Salt (slightly if wagyu), fresh grounded pepper (fine grains, thick burns) and maybe garlic powder.
3. VERY hot pan, don't poke holes in the meat, let it develop a crust before flipping.
4. Let it rest 3-4 mins so juices don't get out when cutting.
*_Let the meat come up to room temp(1h), rest the meat for as long as you fried it._*

start your steaks in oil. add butter later, by the time the steak is cooked the butter is burned. Cooking steak is easy, even thick steaks. 3 minutes a side for every inch of thickness. Lower temperature, add butter, 2 more minutes per side or less if you like it a bit rare.
Or use clarified butter for searing since it has a higher smoke point. Regular butter has a low smoke point temp in the 200s.
Yea I found it odd that they started with butter. I cook my steak with avocado oil and then lightly baste with butter.
I always just a bit of oil since the butter burns to fast. A mix of oil and butter would give better results :). Sauce is normally added when the steak is practically done. Remove steak from the pan, then make the sauce then if needed add the steak back in.
Vegetable oil is literal poison to humans. I use ghee clarified butter for thick steak.

Here's the easymode secret: salt and pepper both sides, high heat quick sear both sides, put your skillet in the oven on broil for 8-10 min depending on thickness take it out let it cool down and done.
Most oven instructions include a temp with their time.
You already failed by seasoning it with salt.
Only add salt after cooking your meat, be it steak or whatever. Salt makes it leathery because it dehydrates.

Best steak you'll ever have. Salt dry brine for 1 hour while tempering on a cooling rack. Season both sides with pepper, coriander, and smoked paprika. Sear each side for 30 seconds. Put back onto cooling rack. Finish in oven at 225F until internal temp hits 135F medium rare. 145F internal if you prefer medium. Take it out and drip 1tbsp of butter to top it off. Let it rest for 5 mins. Enjoy.

I am a professional cook of over 15 years and I have to say stabbing your steak with a fork doesn't have it more tender it only breaks the fibers and causes it juices to not stay in.
Asmongold wants his steak to be more akin to jerky. So stabbing it with a fork absolutely helps him attain the result he wants.

@annosBurny no it actually hasn't. Where the hell are you getting this misinformation? What I said is a proven fact that all you are doing is puncturing the cell membrane and releasing liquid. The best way to accomplish that is to beat it with a rounded mallet. It loosens the membrane without breaking it, but thanks for letting everyone know you have no idea what you are talking about.
You don't put butter into the cast iron skillet in the beginning. You put the steak without butter in the skillet and only add the butter near the end. Otherwise the butter will burn until the steak is done since you have to cook with high heat to get the nice flavours.

Once you figure out your preferred method of cooking steak it's really easy. My buddies do reverse sears but I just flip mine a few times over a certain amount of time depending on the thickness and pour over garlic, butter and thyme or rosemary while I'm cooking near the end. Make sure the steak is room temp, slap it with some salt and pepper on both sides, and get a cast iron going hot before cooking.

I love these type of episodes. Also I was on Miz stream when the card got stolen, and I'd thought chat trolled him when they said Teccy stole a card. Guess it was true lol.
Tips for ribeye. Dont add butter in the start. Heat the pan, place it in the pan with the thick fat on the side down, slide that around and use that to grease the pan, leave the butter until near the end, add parsley or w.e with it. Melt the butter, and baste the steak with butter in the last minute or two.
for decently thick steaks I poke holes on both sides then season with montreal on both sides heavily, set stove to high let the butter melt in my cast iron and cook both sides 5 minutes each, sometimes requires 1-2 minutes longer depending on thickness of steaks.
Doesn't matter how expensive a steak is if you don't know how to prepare it properly. I was hoping for a collaboration with Guga or someone that actually knows how to make proper steaks.

All I can think is that the same thing happened the last time Emi and Tec made steaks for Asmon. What I want to see is Asmon use his spices and cooking techniques with all the different steak types to put them to an ultimate taste test.
They really do need to make a steak tier list and have as many otk members participate as possible.

What's with the pixar movies pictures on the wall? That looks like the default decoration of a house when you buy it.
Frying a thin steak I get, a thick ribeye needs an oven or grill. Searing it at fiest is nice, but its gotta be finished in the oven. Poking holes in the meat also allows it to lose moisture, so it will be tougher rather than tender.
I tend to sear it, then place it in the oven for about 3 minutes on each side after that and it is delicious.
Where's the other 1 hour of podcast though :(

Salt steak and wait for a bit.
Lightly oil hot-ass pan (not butter yet).
Lay steak and press on it a bit. Don't move it for 1 minute.
Flip and do it again.
Now add butter and cook as long as you want.

Butter base matter if you dropping rosemary and thyme in the butter that your using to base it , gives you that nice herbal flavor
Thin steak: salt and pepper on one side. Smoking hot cast iron pan. Butter. Seasoned side down until charred. Flip. Cook until raw texture is gone. Serve.

Inconsistent sear is because of the cast iron. I’m pretty sure Guga did tests and a stainless steel pan still seared just as well and was way more even than cast iron

you need to use a high smoke point neutral oil like avocado oil to cook your steak like that, then you could finish with a butter baste if you like.
Fun Fact: Older cows are sold for cheaper with lower quailty meat overall, but the most flavor by far. Younger cows are sold for higher prices because they have better looking tender meat. Its basically tender vs flavorful. Ofc the best would be a fillet from and older cow that is perfectly tender with a ton of flavor.
