Why the simple syrup mixture? Is that only to moisten cakes made in advance?
Yes! :) If you make the cake in advance, it does start to dry out even if it's well wrapped.

Why simple syrup? Is the cake not sweet enough ?
Simple syrup is just a combination of water and sugar. You do not have to use it at all, only if your cake is too dry for your taste :)
