Take it a step further and separate the individual pieces from each other so that you can control exactly what temperature your white meat gets to and what temp your dark meat gets to. Dark meat needs to cook much, much longer and reach an internal temp of 180-190° Fahrenheit. If the white meat gets that hot, it'll be horribly dry. That's why you separate the meat types to control that variable.
I guess I'm just to old school. I want my bird just like my grandparents and parents cooked it and how I'm teaching my kids to cook it. I've never had a dry or undercooked bird so I prefer to not fix what isn't broken. 🤷♀️
A nice step to add to this is doing it the night before and injecting it with your preferred butter based injection. Makes it literally fall off the bone tender and sooooo juicy.
You should pull it off way before it hits 180. It should be 165 at fully cooked, residual heat cooks the rest as it's resting. It should be pulled out around 155-160.
A little tip- I always take off my watch when doing this type of cooking (bear handed, with raw meat), it keeps you watch clean and the cooking more hygienic

Everybody, please do not cook your turkey breast to 170, cook it to 150. Anyways when you spatchcock a average size bird, the breast will generally reach 150 at the same time the thighs reach 175 or so
