Coconut Pound Cake

- This is a good, moist, old-fashioned pound cake flavored with a little lemon and coconut. You can also use the base recipe and then flavor it anyway you like. Great on it's own, or it can be glazed or served with fruit and/or ice cream.

Looks fabulous, guys! Pound cake is indeed popular in the South and particularly in our family. My mom and grandmother make them all the time and can usually always find one in the freezer, too! I make them occasionally myself. I'll have to try it sometime with the coconut! Cheers!

Pound cake is one of my favorites when I don't want to fuss with a layer cake. I've actually started measuring my flour by weight. Conversion are easy enough to find on the web. My 12th edition Fannie Farmer cookbook prom 1979 actually gives you metric measurements as well as cups. Think the US was planning on switching to the metric system but it got killed by Reagan in the 80s.
Hi Robert - you can't go wrong with a good pound cake. It has been said that measuring by weight is more accurate than by volume. I remember studying the metric system as a kid because we had to get ready for the switch over, but it never happened. Thanks!
Looks great, bring back those recipes! I found a pet milk recipe book in Valu Village, and a couple size 3X summer shirts! Nothing makes a big boy happier, then finding apparel in his size!
