I used to love Entennman's Iced Banana Cake until they got smaller AS they got too pricey and I've been looking for a good do-it-yourself replacement. This looks like just the ticket. BTW, do you ever use nutmeg in your banana desserts? Perfect together!

I LOVE Betty's white cake mix. So versatile. My favorite quick cake is a classic lemon coconut. Make the cake according to the directions, get some Dickinson's lemon curd to spread between the layers, some Pillsbury's classic white icing to frost the cake. Top it all off with your favorite sweetened, flaked coconut. Delicious and pretty.
I can't wait to try this. I love banana cake. I'm going to add some nutmeg though. All things banana deserve nutmeg.
jimsher9880 Your lemon coconut cake idea sounds wonderful! Love anything lemon and coconut just adds to the fun! I like most of the major cake mix brands, but a couple times a year the Betty Crocker mixes go on sale for $1 or $1.25 and I stock up! This Banana cake sounds really good! Kevin, what is the reason to have your eggs at room temp? Just curious because I have seen other recipes call for room temperature, too.
Debbie Wright Hi Debbie! I was told that when eggs are cold, they do not incorporate as fully into the batter as they do when they are room temp. Also, when beating egg whites, the whites will more easily separate from the yolks when the eggs are cold, but they will whip to a greater volume when they are at room temp. That looks awesome. I joke about any kind of baked goods with bananas in it, if you can't open the end of the banana and pour it out of the peel it's not ripe enough yet. :)
