Interesting. I learned to make mac and cheese from my southern grandmother and mother. Like you, they layered the pasta and cheese, but they always grated the cheese. Some butter between the layers too, and then milk poured over it all. No eggs. It’s still my favorite. I never liked the saucy kind of mac and cheese.
Yes, I took the Lasagna way with this Mac & Cheese. The eggs are to hold it together better and give it a twist. If you let it cool down, you can eat it with one hand.

Looks really delicious! Simple to make! I can see it would be a hit at a party! It is soooo refreshing to see a cooking channel here on YT where the chef/cook does not have a $2,000,000 kitchen!!! I am so sick of seeing wolf stoves 9 feet long with 12 huge burners, sub zero fridges 8 feet wide, huge expensive 325 gallon farmers sinks!!!! Kitchens that are like 5,000 square feet in size!!! Geeze. Pathetic people. A cooking channel like this with a REAL person who lives a REAL life like 99% of the rest of us is soooooo refreshing. Love it. Thanks for this recipe. I myself would have fried the onions in buter 1st.
Then maybe added a crushed potato chips or ritz cracker crumbs covered in butter to top each after first bake
Very nice mix. The liquid mixture of milk eggs or even heavy cream then would have poured both on top then finalize the rest.
Crumb topping as mentioned above for final bake/ browning

It's how we like it, and it's a guide to have change it to your taste. All recipes in my eyes are just a start.
By the time you get done adding all the different cheeses, you will have a very expensive dish....too much cheese for me, I'll settle for some American, and Cheddar....
Not really, we use up what's left over before the cheese goes bad. We make this 4 or 5 times a year, and my favorite cheese to use is Vermont White Cheddar.
I use a lot of cheddar,and a little american, but will skip the eggs, most of the time i don't even use roux...

Sargento sucks! On it's own, it doesn't even melt in a heated pan by itself!! Makes you wonder what it is made of!! And, you would absolutely NEED salt and pepper after adding THAT MUCH MILK!!! OMG!!!
I do add pepper in this, and we've cut a lot of salt out of our diet. We do use SPGO. Remember that the noodles are broiled in lightly salted water. The butter is salted, too. And all that cheese has salt.
All the cheese melted here. Cheese is graded from A to D. This cheese is a grade B cheese. A graded cheese is like artisan cheese.
