How to make OFE NSALA // White soup

- OFE Nsala
* 750g goat meat
* Handful of stock fish flakes
* 1 teaspoon salt
* 1 ½ teaspoon seasoning cube
* 2 dried cat Fish (washed and deboned)
* 100g Yam
* Uyayak/prekese
* Crayfish
* Yellow pepper
* Spices:
* Ogiri Okpie
* Uda pepper/grains of Selim
* Ehuru
* Oziza seeds
* Extra beef seasoning and pinch of salt to adjust seasoning
* Vegetable: basil. Use utazi if available
Method
* Add goat meat, stock fish, beef seasoning and salt to a wide pot. Add water, cover to cook.
* Cook for about 25 minutes until meat is almost fully done.
* While meat is cooking, Peel and cut yam into cubes.
* Blend yellow pepper with Ogiri Okpie, Uda, Ehuru and Oziza seeds.
* Check on the meat, add dried fish, yam and more water.
* Add uyayak, cover to cook for about 10 minutes until yam is soft.
* Remove the yam, pound or blend with water.
* Remove the uyayak, add crayfish, blended pepper and spices.
* Add the pounded yam.
* Cover and allow to cook for about 8 minutes on low heat.
* Open pot, stir, add the vegetable and cook for about 1 minute.
* Enjoy with pounded yam, fufu or by itself.

I cooked this after watching your video but I think I added more than enough uzuza leaf which I think makes it to be overly bitter. Though it's fine, but my younger brother couldn't eat it because it's too bitter. However, I ate it like that with nice Semo cause it's been a very long time I ate white soup, which is actually why I had to look up a video to prepare it. I learned my lesson, next time I'm making the soup I won't add plenty uzuza leaf. I thought a hundred naira uzuza leaf would be good, but I had no idea that's way far too much. Thanks for this video, I sure will try it again and I'm sure I will get it my next time. It was delicious anyway cause the bitterness makes it looks as if I'm eating onugbu soup.
U bought utazi not Uziza. Uziza leave is more of a peppery and spicy leaf but not bitter

I think it must be smooth as pounded yam if not, it would give the soup rough yam residues which won’t be nice

U can’t use coco yam for Ofe nsala cos the soup is supposed to taste almost like pepper soup that they put yam

No
We didn't see when the pepper, uda, and uziza that were to be blended were added.

Please if the goat meat is that of a He-goat, won't it get too soft with this much boiling, as, the meat of the male goat is softer? 🤔
It will be too soft if you allow it through out the cooking process, for me the best way is to remove the meat at the middle of the cooking then put it back after putting your leaf 🍃 and turn together 👌

No, you can't.
Potato is another great substitute after yam. I actually prefer baking potato where i live than yam and thats what I have been using.

I once ate this soup in a restaurant, before I could finish eating the soup turned watery.
When i asked why, I was told is because of the yam used as thickener.

Nooo, for ofe nsala the thickener must be yam. You use coco yam for other soups.
