  • This is the way we do the puff pastry in the bakery. The method may differ from place to place, common practice to do 6 folds. Depends on the result you want to achieve.

    Absolutely enchanting! In our family we make something similar for NewYear's Eve, called a Ukrainian Napoleon. It is a layered cake with a cream filling (whipped together cooled pastry cream and softened butter) and should be done with the same dough as mille feuille, but we sometimes do it with buttercrust pastry to make life easier :)

    I've been making puff pastry at home with my daughters since they were 3, they loved spreading the flour everywhere and making a mess but it was fun for them only 🥶

    Hi Kris, that is one of my favorites, especially with lemon curd.
    One place I worked in had us bake sheets of puff pastry like that. Then they cut them into desired shapes for whatever filling they put in when dessert was ordered at the restaurant.
    Did you bake with a sheet pan on top to keep them even? I missed that part. The pastry looks just perfect. Would love to crunch into some right now with my coffee! Xxoo

      Cannot be more fresh than preparing this pastry 'a la minute' 👏i really like caramel version of this Napoleon, really really good!
      yes i didn't put that part even though i wanted, but I didn't find the right footage to support that, but yes, other tray is used for that, we sheet down the pastry, dock the surface, a sheet of paper on top and then metal tray. what is your experience baking it? ☺️

      @@KrisKazlauskaite Yes we did the same. Docked it, then parchment on top and another sheet pan to weigh it down. It was a long time ago and the place did not have a sheeter. They are fabulous. Not that I make it that much but I would love to own a counter sized sheeter. But they are $$$$.

    How come the sheet became brown in colour ? Is it the baking ? Missed that part 😟 so this is the normal pastry dough recipe right ? Other than meringue icing
    Please share desert receipies when you have time.

      hey, yes i didn't put that part even though i wanted, but I didn't find the right footage to support that, but yes, other tray is used for that, we sheet down the pastry, dock the surface, a sheet of paper on top and then metal tray. the pastry turns quite brown but it tastes nice :)

    What was the clear liquid on the cardboard at the end? I assume it it so the pastry won't slide off the board.

      So lemon juice helps to shape the dough easier, otherwise it would bounce back and would be hard to stretch; it also prevents from decolouration.🍋
