  • MASA PREPERADA:
    4oz Sherwood’s Hatch Green Chile Garlic Confit
    8oz Hot Hatch Green Chile Purée
    1 cup Chili Infused Beef Fat
    7.5Lbs MASA Preparada
    1 tsp Baking Powder
    Salt
    Ice Cubes
    Tamale Filling:
    4oz Sherwood’s Hatch Green Chile Garlic Confit Spread
    16oz Softened Cream Cheese
    4 Ears of Corn (6-8 cups)
    2 cups Diced Hatch Green Chiles
    1 Diced Yellow Onion
    Salt and Pepper to Taste
    Rolling The Tamales:
    Add 1/4in thick layer
    of masa on big end,
    add 1-2oz of filling in middle,
    then fold side flaps and flip.
    Steam for 2 hours, then left the lid closed for another hour because they were so big.
    Serve with Hatch Green Chile Tomatillo Salsa and Sour Cream.
