BLUEBERRY LEMONADE MESQUITE SMOKED BBQ BABY BACK RIBS

Blueberry Lemonade Brine:
1 cup apple cider vinegar
2 cups frozen blueberries
4 cups water
2 Tbsp Kosher Salt
2 Tbsp Black Pepper
1 Tbsp Onion powder
2 lemons
10 garlic cloves
1/2 bottle beer
Brine ribs for 24hrs in refrigerator.
Rib rub:
4oz Sherwood’s Garlic Confit
Infused Olive Oil
2 Tbsp Black Pepper
1 Tbsp Hatch Green Chile Pepper
1 Tbsp Paprika Pepper
1 Tbsp White Pepper
1 tsp Cayenne Pepper
Rub ribs and smoke on the Pit Barrel Cooker for 2 hours, until the meat pulls back about 1/4 inch from the bones. Then slather some of that blueberry bbq sauce we made on them and put back on the smoker for another 20 minutes. Cut the ribs into individual ribs, sauce, then air fry for a few minutes to make them sticky ribs.
Blueberry Lemonade BBQ Sauce:
1 Tbsp Garlic Confit Infused Olive Oil
2oz SHERWOOD’s Garlic Confit Spread
2oz Hot Hatch Green Chile Purée
3 Tbsp Butter
2 cups frozen blueberries
1/2 cup whiskey
1/3 cup Blueberry jam
3 Tbsp Molasses
2 Tbsp Apple Cider Vinegar
2 Tbsp tomato paste
2 Tbsp Stone Ground Mustard
1 Tbsp Minced Ginger
1 Tbsp Onion Powder
1/3 cup Worcestershire sauce
Juice of 1 lemon
