Old Fashioned Cornbread Dressing

- This old-fashioned cornbread dressing is slightly sweet. It's the base recipe for a quick and simple dressing that cooks in an hour! You can add turkey, sausage or whatever protein that you like. The seasonings are to my liking, so if you like more or less adjust for your taste.
Full Recipe:
2 cartons of sweet cornbread.
1 1/2 to 2 loaves of white bread which have been left to go stale
2 cartons of broth (adjust to your desired moistness)
1 pkg of cubed stuffing mix
2 beaten eggs
1 tsp black pepper
2 tbsp of ground sage
1tbsp each onion powder, season salt, dry thyme, poultry season
Sautee 2 med onions, 4 ribs of celery, 2 green (bell) peppers in 1 cup of butter.
Combine and taste for seasoning. Bake in preheated oven for 1 hour or until a knife dipped in the middle comes out clean.

I make mine very similar. I only use celery & onion, then sauté in butter. Oh, I also use Kerrygold Irish butter. It makes a huge difference. After veggies are sautéd, I add the Pepperidge Farm cornbread stuffing mix & chicken broth and fluff out with a fork. It is moist, yet not too wet. It is sooooo good!

Great question. This is such a fluffy dressing that it helps bind while also providing additional moisture. I've also made this recipe without eggs and it's still very good.

That was actually 1 carton of chicken broth/stock. I ended up using 2 cartons for this recipe

Yes, I used the second broth but it would have been fine with water as well for anyone who didn't have back up.

Please explain 2 cartons sweet cornbread. Can you please estimate the amount of cornbread as well as the amount of white bread used. Your recipe looks intriguing but in order to achieve the consistency that you suggest, amounts by cup or weight would be appreciated. Thank you.
I used 2 boxes of Jiffy corn muffin mix. However you can use a 50/50 proportion when using sweet cornbread. You just don't want it TOO sweet. If you are making a Martha White (unsweetened corn bread) I would use three parts cornbread to 1 part bread. I hope that helps. I will be coming up with an updated Thanksgiving dressing recipe where I will keep in mind to do more measuring!

It might make it tighter and not as fluffy if you don't mind that

Great question! It adds a freshness or another note to a dish that can be only one dimensional. It's another layer of flavor (although I've done a very good dressing with just onions and celery, but I can tell the difference when I've left it out).

I like it both ways. There is a distinct difference in the taste.
Sugar in cornbread for dressing is horrible.. I made the mistake this year and everyone noticed the difference. Ugh
Why use stale bread? Yuck!
Great question! Did you ever make meatballs and add milk to a slice of bread to stretch it? The bread turns to mush. In dressing you need bread but not mush which is why we use toasted or stale bread. It will hold its structure when you add the broth. But if you don't like the idea of stale bread use a sturdy bread such as Italian loaf or just stick with Pepperidge

I love stuffing dressing and your dressing looks delicious but you have too many ingredients. There's got to be an easer way of making stuffing.
Stove top is really good, just use broth instead of water and add half to a full can of Campbell's cream of chicken soup. Flavorful and simple and you don't have to bake it!

I’ve ever seen chunky “dressing”. That is definitely stuffing not southern cornbread dressing. They are both good but distinctly different. No one would ever use sweet cornbread and that was literally stuffing mix you used. The names are not interchangeable.
