I´m from Germany, although we have no spanish family roots, my mother used to cook this decades ago. Was called "Spanish Egg Pan".
40 years later, it´s still one of my most loved dishes. Thanks for the video, and I highly recommend to everyone to give this a try.

Another wonderful video, demonstrating in less than 9-minutes, how to put together a full meal. As always, the little technical tips, like cracking each egg into a bowl and creating a little well in the sauce for each egg, are always appreciated.
Whenever I go to the market, I'm always careful to buy extra tomatoes and bell peppers, to have on hand. My shopping list includes a guess as to what might be needed in the yet to be released Spain on a Fork.
One more thing, Dear Albert; have you ever seen a method of finely dicing onions, by holding an onion by the top green part of the plant, while making criss-cross cuts into the other end of the onion? (Forgive my inability to describe). It is a method of dicing an onion that I learned while living in Mexico. Women would sit in their doorstep slicing and cutting vegetables, so we could purchase pre-cut items for our at home meals. Have you ever seen this in the urban areas?

OMW what a great idea, however dramatic change from me..... I would use English baked beans in tomato sauce using good old pork sosages and the eggs served with Scottish tattie griddle scones 🤤😋🏴🇿🇦
This looks delicious. I'd make it for dinner tonight, but I have no chorizo. I'll have to wait until my next shopping trip. According to their website, my grocery store does carry Spanish chorizo, but if it is out of stock, I'll go with vegetarian Mexican chorizo.

When I first read it I thought it said "flamingo eggs".
"Flamenco" IS the Spanish word for "flamingo." (No... I did NOT always know that.) 🦩

Isn’t this a Spanish version of Shakshuka? And aren’t there versions from all around the world? Didn’t the original recipe come from the Middle East, to be carried with the Moors to Europe and thence elsewhere? I believe there’s a Persian “green” shakshuka that’s chock-full of herbs, a Mexican version that incorporates salsa, a Turkish version using yogurt, and so on … but almost always it’s eggs cooked atop a sauce. Or am I wrong?

@@annatamparow4917 with regards to solely corn-fed - possibly not. I thought you were referring to free-range, as opposed to being fed a particular diet. I’ve noticed when I’m in Spain their egg yolks are the most beautiful golden colour, even when not free-range, so I’m sure you’re correct when saying that diet plays a large part in that.
