Indian here, mom makes dahi this way everyday. She also removes the cream from milk everyday and stores it in the freezer. Every 6-7 days she takes out that cream to make ghee (saturated butter), and if there's enough cream, then first it can be used to make paneer and the remaining residue is used to make ghee. And by boiling and removing the cream from the milk, the milk becomes semi-skimmed (so same nutrients but way lesser calories. This way we have healthy fresh homemade dairy products every day.
Milk here costs 60rs (around 0.75 dollar) per litre.
This is THE INFINITE DAIRY PRODUCTS GLITCH.

If you've got no starter then you need to make farmers cheese first using citric acid. Or you can use cardamom clove or as the comment above says pine cones, they need to be green (young) though.
