It's a legit question, and he actually pauses between milk and fan, so he was more likely trying to decide what word to use to end the sentence. ex: milk lover or milk fan

So I don't know if Priya is Gujarati but I kinda have an idea why her mom would make up the word 'chuck' for yogurt (dahi in Hindi/ Gujarati). Becuase in Gujarati the word to describe really set yogurt that when you scoop out comes with clear iceberg-like ridge is described as 'chukka/chukko dahi' .
I guess 'chuck' is just a shortened American-ised version of 'chakka/chakko' :D

Just adding to that thought. I don't think Shailendra Krishna is a typically Gujarati name but the 'Chukka chuk' thing was my first thought when I heard her say 'chuk'. It would be a sentence like 'Ek dum chukka chuk' (like saying, thats perfect) that got Americanized to 'Its chuk'.

when you heat the milk at first, the whey proteins denature which will contribute to making the yoghurt firmer! that’s why you boil the milk even though it’s already pausterized 😊

Maddie Goss pasteurization happens at a lower temperature for a short amount of time, and isn’t enough heat to sufficiently denature the whey proteins for yoghurt 😊
Also, be careful about fully boiling it, because it can burn. Aim for ~190°.
Just curious, can you buy the plain packed yogurt and use it as the starter?

A family friend of mine always tells a story about how his family got mad at him for eating all of the yogurt, which meant that they essentially lost a starter that was decades old. He got in a lot of trouble. lol.

Loved the contrasting comedic chemistry of Brad's enthusiastic goofiness with Priya mostly playing it straight was great. Also Brad boost of excitement when getting the seal of approval from Priya's father was absolutely fantastic.

This is my favorite IT'S ALIVE, hands down.
Meh seemed like they couldn't create the chemistry and conversation on their own and had to be prompted by the production team. This episode felt really forced for me.

My exgf's grandmother snuck a small jar of yogurt starter in her purse when she emigrated to Canada from India. She had heard that Canadians seemed to tolerate really crappy yogurt and that was not something she was prepared to do. I tried some and yes it tastes better.
Their yogurt culture is going on five decades.

Heating the milk as the 1st step does 3 big things (that I'm aware of) it changes the structure of the protien so that it holds together better and holds more of the whey
... IE so your yogurt is thicker ... so you can strain or cook with it easier (it *can* separate to grainy liquid when heated as yogurt)
And... It stops the progression of enzymes in the milk that could spoil the milk
And.... It kills bacteria present that may compete with the cultures you want in the yogurt
You chill yogurt before you dip into/cut/eat because the protien matrix stabilizes and it gels better (if your straining your yogurt this mean you strain off less white protien liquid... You get a 'cleaner strain')

I don't know about hindi but in bengali "chaka" (or "chak") means something that is solid/gelatinous. You can also use to describe, say fat that has cooled and settled. Great episode as always!

I've been binging these videos since last night but i wanted to say, the editing is so funny kudos to the editor!
I pre-ordered Priya's book, and Amazon was nice enough to ship it so that I had it on the release date. Sadly it did not come with her father's yogurt starter.
Just show up at her house and ask her for some, I'm sure that will work out for you!
Buy a single serve of a good plain unsweetened yogurt, like Sigi's. Use 1-2 Tbs as a starter. Then save some of your yogurt for the next batch. I strain out about 40% of the volume of whey (use a coffee filter lined strainer) to make a thick Greek style yogurt. You can use the whey as starter, even better than using the good thick yogurt you want to eat. Also, my dogs love to have a drink of the whey!
