How To Make Belizean Johnnycakes

  • I believe that each culture has their own version of Johnnycakes or Journey Cakes. For Belizeans, Johnnycakes are made with flour, sugar, baking powder, butter and coconut milk. This is a very simple recipe that yields 8 Johnnycakes.
    Ingredients
    2 cups flour
    3 tsp. baking powder
    2 T. sugar
    1/3 cup butter (softened)
    5 oz coconut milk

    I always look out for what your gonna bake/make next. I always use your recipes in my kitchen. My favourite is the Creole Bread n Creole Bun. Its great. I have a big family plus i love cooking and baking so THE BARE PANTRY SHOW is one of my fav.CZcams channels. Thanks again for keeping these tasteful Belizean dishes alive.

    We make Johnny cakes/hoe cake differently in the states. We bake it in a cast iron skill it in the oven. In the South they use to make it with lard. My Grandma used to make them. This is 😎. I think I'm going to try them both ways. Thanks for sharing this recipe.

      They use to make them with Lard in Belize too, but many people have stopped cooking with lard since the 70"s.

    Johnny cake in America, at least what I've heard of, is made with cornmeal. My Aunt gave me a wonderful recipe for Johnny Cake. And it's usually made in a loaf pan, but you can also bake it in a muffin tin. Johnny Cake is another name for Corn Bread. But like you said it's made different in different countries.

    i just made them yesterday and absolutely LOVE them! gonna make more today with the leftover coconut milk ☺️ question, how long can they be stored? i assume quite a while from their name 😉 but would rather ask. thank you so much for that amazing recipe!

      ​@@TheBarePantryShowyou did not remove the cakes from the oven, that's what I am saying. Never seen that before. Normally the person doing the video does that!!!!

      @@CarmenArjoon-lo6fx my family works as a team doing the show. If someone else removed the cakes, then I must have been running the camera. Sometimes I won't taste the food because I have adverse reaction to the food so another member of the team does that.

      I'm sure you can try but belizeans never use egg in Johnny cakes.

    Now I am puzzled. Johnny cakes came up in an episode of "The Sopranos" but they looked like American Pancakes. These look more like a differently shaped English Muffin, I am English btw and do not like American Pancakes.

      I think even in different regions of America they are made differently. I have seen the pancake type. In Belize and most of the Caribbean it's more like an English muffing or biscuit.

    Now after watching completely bc I like very sweet and very spicy,I would dip the cakes in sugar before baking,mb alittle cinnamon or nutmeg too,but that's just me and my sweet tooth.thank you😄❤️
