    Chicken thigh skinless boneless 1
    Nonfat greek yogurt 200g
    Onion 30g
    Cucumber 50g
    Tomatoes 50g
Fresh mint or parsley 1 bunch
    AP-Flour 50g
    1/2 tsp baking powder
    Oil 3g
    Marinate:
(Kosher) Salt, pepper, cumin, garlic powder, paprika, turmeric 1/2 tsp each
cayenne pepper, cinnamon 1/4 tsp each
    Sauce:
(Kosher) Salt, cumin, and garlic powder 1/2 tsp each
If you use table salt then please use 1/4 tsp each
    Directions:
First, remove the skin from the chicken thigh. Cut it into 5-6 small pieces. Add 50g yogurt into a bowl with the seasoning for the marinate. Add in chicken and combine everything. Bake this in the oven on a baking rack for 15-20 min at 200°C or 400°F.
Add into a bowl ap flour, salt, and baking powder and mix, add in 50g yogurt and 1-2g olive oil. Mix with your hands until it has formed a dough ball that is slightly sticky. Let the dough ball rest.
Dice cucumber, onion, and tomato, and chop up mint or parsley. Mix into a bowl 100g yogurt with seasoning for sauce. Add in cucumber, onion, and mint/parsley, and mix.
Place a pan 28cm/11 inch on a stove (no heat yet). Add 1 g of oil and add in the dough ball. Press the ball flat and flip it, pressing it down around the edges until you have a round flatbread that will cover almost the entire pan surface. Switch the heat to medium. Now slowly cook the bread, flipping it every 45 seconds for 3-5 min in total until golden brown.
Now build the shawarma, first add half of the sauce in the middle of the flatbread, add half of the tomatoes, then add all of the chicken that should be cooked by now. Add again the rest of the sauce and tomatoes, and roll up the shawarma. Done!

I just made this but with the avocado sauce and a Tortilla from ur burrito videos with a little added Sriracha sauce and it was honestly one of he best things I've ever had, the chicken marinade tasted so good I couldn't believe it.
Amazing recipe definitely my favorite chicken marinade so far.

I love your cooking and have already applied a lot of your recipes and I'm happy to try out some more.
I'm gonna try your take on the recipe today but as a syrian i have to add a couple of things and i advise u to try it.
One key spice in the shawarma is kardamom it's very essential to the shawarma and just tastes amazing with chicken in general and i very much advise putting pomegranate sauce when putting the sandwich together.
Those two additions will already make it very much closer to the syrian shawarma.
Since I don't comment usually i want to take this chance to really thank you for your takes on recipes and the tips that u give cuz it made me love healthy food and eat everything i want in healthy way

    Texas Style Beef & Rice
    Chicken Teriyaki
    Low calorie buritos
    Low calorie smash burgers

Recipe looks great but I'm curious what brand/type of salt do you use? Because "salt" in recipes implies "table salt", and 1/2 tsp of "table salt" to 50g of flour seems very aggressive for the flatbread - and there's an additional full teaspoon salt in the other components. Not criticizing so much as double checking to make sure your recipes are accurate as you intend, especially since you're writing a cookbook. (And I'm assuming teaspoons are the same in the US and Europe, but I'm not certain.)

    • @Felu
      @Felu  Před rokem

I use different kinds of salt to be honest, I have table salt and also kosher salt. In the videos I use my table salt most of the times but you are right, I should specify that kosher salt is more volume in a tsp than table salt. My cookbook will explain this all and also show how many g = tsp
