🍽️ INGREDIENTS:
• 1 Cup(s) all-purpose flour
• 32 Ounce(s) beef broth
• 5 Pound(s) Boneless Turtle Meat (or [Alligator Meat](Link to the new window))
• 1⁄4 Cup(s) chopped flat leaf parsley
• 1/2 cup chopped white onion
• 1/2 cup chopped green bell pepper
• 1 Bunch(es) green onions, chopped (separate white from green parts)
• 2 Tbsp minced garlic
• 1 Tablespoon(s) Louisiana Crawfish Creole Seasoning
• 1 Cup(s) red wine
• 10 Ounce(s) rotel (diced tomato with green chilies)
• 3 Tablespoon(s) sugar
• 15 Ounce(s) tomato sauce
• 16 Ounce(s) water
🍳 METHOD:
* Wash Boneless Turtle Meat and cut into bite-sized pieces.
* Using a large cast iron dutch oven, cover the bottom with oil.
* Add turtle meat and season generously with LA Crawfish’s Creole Seasoning.
* Brown turtle meat on medium/high heat.
* Remove meat from pot and set aside.
* To the remaining oil, add an additional ½ cup of oil and the 1 cup of flour.
* Cook on medium/low, stirring constantly, until the mixture turns a dark chocolate brown color.
* Add vegetables (white onion, bell pepper, and white parts of the green onions) and sauté until soft on low heat.
* Pour in beef broth, tomato sauce, rotel, water, sugar, and wine.
* Season to taste with Louisiana Crawfish’s Creole Seasoning.
* Return the browned turtle meat to the pot and bring to a boil, stirring occasionally.
* Once boiling, reduce heat to a simmer, cover, and let cook for 3 hours until the meat is tender.
* Serve your Turtle Sauce Piquante over steamed rice.

My mother...Carmel's Seafood in Lakeshore MS...God Rest her Soul....made the "BEST" turtle soup you'd ever tasted. Someone wld bring her a turtle n she wld feed it til it got the size she wanted. Then "she" wld kill, clean, n cook it. She had the "BEST" STUFFED crabs..stuffed artichokes, crawfish bisque...even the heads were stuffed. And..many other goodies.

I don't mind a nice turtle soup or sauce picante. Only if the turtle is one that is not endangered or vulnerable (Alligator Snapping Turtles and Diamondback Terrapins).
For people not aware, the turtle they used seemed to be common snappers, which are not currently endangered.

Awesome video, used to work with a guy from Thibodeuax that loved alligator snapping turtle. My great uncle would throw turtles in the cattle trough for a few days before eating them.
Yehh that basically starves them and leans them out and gets rid of a lot of that fat. Common practice down here
