When I was a kid , I loved to go stay with my Mamaw and Papaw . He would kill a Ground Hog out of their Garden , seemed like every week . My Mamaw would put the cut up pieces in pressure cooker ( this was probably 25-30 yrs before electric Instapot types came out ) and would pressure it for maybe 30 min ? . Then she would put the pieces in her biggest cast iron frying pan and after seasoning w salt and lots of black pepper would bake them crispy . It tasted better than any beef roast you have ever eaten !
When I was 12 or 13 my family was out riding 3-wheeler and our dog was with us as always. The dog went into a den of Nutria Rats and brought 9 out onto the bank and another came by him as he was going back in and he caught it by the neck and snapped his neck. He was an American bulldog who was so loyal to us all and had kept all of us from getting snake bit or turtle bit or frog lol he would attack anything that was animal but no other dogs unless they attacked him. Everytime he got a hold of a frog he would foam at the mouth. He was a great dog.

The Nutria and Gambian Pouched Rat aren't really related to the rats people think of as vermin. Nutria: Myocastor coypus - herbivorous Gambian Pouched Rat: Cricetomys gambianus (not a true rat - it has cheek pouches like a hamster) - omnivorous Common Brown Rat: Rattus norvegicus Black Rat: Rattus rattus
I can't help but think that the nutria would benefit from brining. Like Kelly said, when you deglaze the pan to make gravy, you're automatically cleaning it too. The roux is the hot fat (the oil and the cooked fat from the nutria in this case) and starch (flour, in this case) that you cook to whatever level of darkness you want, from which you make the gravy by adding liquid--water here, but you can also use milk, cream, or diluted milk or cream, or chicken, beef, or vegetable stock, and then turning up the heat while constantly stirring. You're right, temperature control is essential throughout the process. You have to have enough heat at the right time. But don't scorch the roux. Keep it moving. The darker you cook the roux, the more intense and nuttier the flavor. I like to throw a diced onion in my gravy while I'm finishing the meat in it. Nice job. Great folks. Good times. Oil, protein dusted in flour, and seasoning, brown it, take it out, add your onions, and cook them down a little. Throw everything together and cook it down till the meat is nice and tender.

After WW2 they flooded the mine shafts to prevent dryrot and collapse. Huge rats like these came out and where chewing thru the walls of homes. The Sheepshead we caught in the kelp beds off San Diego where orange or calico with orange black and white. They had buck teeth with lips. Great taste, like lobster. They use those teeth to crack their shellfish.
Looks like a good way to cook it. We have muskrat up here which is very good meat. I prefer beaver when I clean it and don't get castor all over it like some people do.
Gas is the best way to cook. The Lord knows I have plenty, especially after eating Taco Bell or some spicy Jambalaya. Nutria is actually really good. I had some (pot luck) when down in LA for a training class. I love southern food
In my country Argentina , we called nutria not rat ! And we hunt them in the river with 22 caliber and then we eat at home or the river and we cooked in sauces and is a nice meat to eat !

I'm a fishermen/hunter gatherer from Aotearoa NZ, it is our duty to ensure our kids have a chance in the future to provide for their families! Good luck with the gathering but do better with the environment because everything that lives their depends on it 💯

We cook Nutria and all we do is put it in a aluminum pan with onions, garlic, bell peppers, and a beer in it and slow cook it on the grill
Once you get use to using a gas stove you will never want another electric one. They cook soooo much better
