I kid you not I was getting creative with my pantry and fridge items last night and made almost this exact recipe.. only difference was I dissolved some anchovies in the olive oil… leave it to the wonderful Spaniards for beating me to it!!!!!

This is one of my favourite dishes, although in a slightly different version. I use melted anchovis in the oil at the start and most of the times I use acelgas instead of spinach. And I mix cooked rice in in the last moments, When I really want to make it extra tasty and rico, I serve it with baked pumpkin slices as a sidedish. Que approveche!

Good afternoon Albert, I have spinach fresh in the fridge, not wanting to make creamed spinach, this recipe would help me a great deal so that spinach cannot go wasted. Looking forward to making this, I wanted to make it for Christmas dinner alas we had already the right amount of veggies and it would have been wasted. Now it will be appreciated. This dish gave me such inspo! I didn't have all the ingredients at home..... but i had kale, walnuts, and dried cranberry. So i used your technique and my ingredients, and it came out delicious . Next time I'll try it out with the actual ingredients 😂. Thanks for the delicious dishes

Here's the $1 million question: what dish would this NOT be the perfect side for? Just beautiful, and the other commenters' suggestion of using dried cranberries sounds amazing (especially to me, as I prefer very subtle sweetness to the richer sweetness of raisins). Beautiful dish!

I bet you could do very well with variations on this with alternative greens, alternative dried fruit, and alternative crunchy bits. (You could switch out olive oil and garlic too I guess, but I can't see why you'd want to!)
Our garden is great at growing greens we have no experience cooking and terrible at growing the ones we know, so this is apt for us.

I'm skeptical of the raisins, but willing to give it a try. None the less, the spinach, garlic and pine nuts sound like a great combo.

I have pine nuts, which I only ever use to make pesto. I didn't know what else to use them for. Now I know.
Excellent simple recipe called Foriani uses pine nuts. Cook some pasta and in another pan toast pine nuts and crushed walnuts. Remove… add olive oil, dissolve 2 anchovy filets, add minced garlic and some raisins. Toss in the pasta when done and add Parmesan cheese, toasted nuts and parsley… (hit it with a little pasta water just prior to serving)…. It’s a Ciro and Sal’s staple in Provincetown MA!!!!!

I spent 6 weeks in Spain in the late 70s with 5 of those weeks being in the Alicante region (Guardamar del Segura). Do you have any recipes from that area. I lived on squid, fish and vegetables, but don’t recall any particular specialties.
