공주 드레스 느낌의 프릴 장식이 예쁜 핑크벨벳 케이크를 만들었어요~
시트가 가벼운 파운드 케이크 느낌이라 기존 레드벨벳 류의 케이크 시트보다 더 부드러워 좋았어요.
버터크림에 크림치즈를 많이 넣은 편이라 고소한 느낌이 나고 오렌지술이 있어 사용했는데 상큼한 풍미가 살짝 나서 잘 어울리더라구요.
오렌지술이 없으시면 바닐라익스트랙을 사용하시면 될 것 같아요.
크림치즈 함량이 높은 버터크림이라 기존 버터크림보다 묵직한 느낌이라 초벌 아이싱 없이 바로 매끄럽게 아이싱 했어요.
프릴 까지를 이용해 아랫쪽만 자연스럽게 투톤으로 장식했는데 공주님 드레스 느낌이 나서 사랑스러운 것 같아요.

▶재료
달걀 5개 (약 250g)
설탕 210g
바닐라익스트랙 5g
무염버터 100g
따뜻한 우유 150g
레몬즙 7g
중력분 270g
베이킹파우더 7g
무염버터 400g
슈가파우더 250g
크림치즈 200g
생크림 100g
쿠앵트로 (오렌지술) 7g
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 바닐라익스트랙을 넣고 섞으며 온도를 40도 정도까지 올린다.
2. 냄비에서 볼을 내리고 무염버터가 담긴 볼을 올려 버터를 녹인다.
3. 달걀 혼합물을 휘핑해 곱고 풍성한 거품을 만들고 중력분과 베이킹파우더를 체 쳐 넣고 섞는다.
4. 따뜻한 우유에 레몬즙을 넣고 몽글해질 때까지 섞고 녹인 무염버터에 넣고 섞은 뒤 반죽을 조금 덜어 넣고 섞는다.
5. 섞은 것을 본반죽에 넣고 섞고 반죽을 2개로 나눈 뒤 식용색소를 넣어 연한 핑크와 진한 핑크색의 반죽을 만든다.
6. 15cm 틀에 붓고 기포정리를 하고 170도 예열한 오븐에서 40분 정도 굽고 식힌 뒤 윗면과 밑면을 잘라내고 옆면의 구움색을 잘라내고 2장으로 슬라이스한다.
7. 무염버터를 부드럽게 풀고 슈가파우더를 넣고 약 5분 정도 뽀얗게 될 때까지 충분히 휘핑한 뒤 크림치즈를 넣고 섞는다.
8. 생크림과 쿠앵트로를 넣고 부드러운 크림이 될 때까지 휘핑한다.
9. 돌림판에 진한 핑크 시트를 올리고 설탕시럽을 뿌리고 크림을 평평하게 바른다.
10. 반복해 쌓고 전체적으로 크림을 매끄럽게 바른 뒤 냉장실에 2시간 정도 굳힌다.
11. 식용색소를 넣어 색을 낸 크림을 모양 깍지를 이용해 옆면과 윗면에 무늬를 짜 장식한다.

I don't know if you know this or not, but if you want your buttercream to be pure white, add a little purple food coloring to it! It counteracts the yellow tones and makes it white :)
