Irresistible Melting Chocolate Lava Cake | Fondant au chocolat

    Everybody loves this. You cut through it, and you see chocolate just oozing out. How can you not like this?
    ▶Chocolate Lava Cake◀
    Quantity: 2 lava cakes using the silicon mould (Silikomart SF119)
    ⊙Chocolate Lava Cake⊙
    Dark Couverture (811 Callebaut) 48g
    Butter 44g
    Eggs 68g
    Sugar 32g
    Cake Flour 20g
    Cocoa Powder 4g
    Salt a pinch
    ① Melt the chocolate & butter.
    ② Meanwhile, sift in the cake flour + cocoa powder + sugar + salt into a bowl and gradually pour the egg while whisking it.
    ③ Add step 1 and step 2. Mix until you get a homogenous batter.
    ④ Pipe into the mould.
    ⑤ Bake at 180℃ for 9mins. This is a rough guidance. Different quantities and moulds will result in varied outcomes so pls adjust the baking time accordingly.
    ⊙Raspberry Sauce⊙
    Frozen raspberries a few
    Raspberry puree 80g
    Sugar 15g
    ① Heat up the raspberry puree and sugar. Just bring it to a boil and then add in the frozen raspberries.
    ② Simply toss it with the raspberry sauce.
    How to store: You can store the batter up to 2 days in the fridge and pipe + bake it whenever you wish. The whole point of a lava cake is to be served as soon as it’s made (so it’s molten inside) so don’t bake it ahead of time!

    I’m literally a person that messes up everytime i bake but i gave this a try because of the good reviews and it didn’t disappoint me AT ALL!
    I FINALLY SUCCEEDED IN BAKING A LAVA CAKE 😭🎉
    ah and a tip! i tried using salted butter to skip adding salt but it became a little too salty.. using unsalted butter will be better!

    this was last night's treat - and it was super tasty. I should have taken it out at 9 minutes but it still looked soft and left it another 2 minutes and the chocolate goo wasn't too liquid. Practice makes perfect! Still wonderful though.

    Thanks!can you make the same dessert, but with a lava cake effect in the center that is different from the outside? for example dark chocolate cake with white chocolate center?

      hmm, theoretically possible I guess if you freeze the batter into a ball shape, put it inside the other batter etc but not sure!

    I tried this recipe just now! I used air fryer instead of oven. But i think my lava cake was overcooked now become fudge brownies. Haha! Still taste good though. Will try bake again!

      Just want to share with everyone, air fryer is possible. 180 degree but at 6 minutes instead of 8 minutes. The lava flows perfectly. And i used 70% chocolate and reduced sugar to 25g

    Wonderful recipe, chef. Can you please tell me what the internal temperature should be when they are done? I know that different moulds, sizes and ovens require different cooking times, but I guess the internal temperature should be the same in all cases. Thank you.

    What a success..the result is perfect. Only the quantities do not work out for me. How do you get 4 units of each 90-100 grams ?? I only got two (I used the same size of ceramic as in the recipe) and did not understand why.
    So I summed up the recipe ingredients and indeed, all the ingredients together add up to 216 grams not including the salt. Makes sense? It's a mistake? Is this a recipe for two units? For four?

    Not sure why. But my batter never reaches the desired consistency-every time I tried this, the oil and the chocolate batter separated ending up with a non-smooth batter emerged in oil. Is it because I removed the melted chocolate and butter from the heat too late? But this happened after I mixed the eggs and flour. Can you please help! Thank you!

      oh you can think of it as all purpose flour + a bit of cornstarch. using normal all purpose flour is fine.

    I’ve often read that “true” lava cakes are chocolate cake with a sphere of frozen ganache placed in the center and then baked. What are your thoughts on that method?

      I read the original recipe is french, they called it "Cœur coulant" or "fondant au chocolat". The french recipe is just as Chef Hanbit showed. The "hack" using ganache in the center is an easy version for people that couldn't get the oozing center with just batter.

    After baking for 10 minutes at 180°C, my lava cake still wet on the top crust. Should I increase the oven temperature?? Or should I increase the time?

    Do your recipes Always bake using convection/fan setting? I see the fan operating when the camera shows the oven, but in your recipes it doesn’t say convection or conventional.
