  • How to make Caribbean style coconut sugar cake, using a traditional recipe form Trinidad and Tobago. Using grated or dessicated coconut, flavored with ginger, bay leaves and and essence, this wonderful Caribbean coconut treat is a wonderful dessert or snack for the kids.

    I remember making these and putting them to dry on banana leaves... Wow. I feel old... Here's a little tip, though: Leave the essence, vanilla, extracts, whatever, till the end. Add it just a couple minutes before it's done. You'll get a much stronger flavour and aroma.

    Hey there Chris, I have been watching a few of your videos and just wanted to let you know that I really do appreciate your videos as they bring back allot of memories of when our mom used to cook for us, this was back when we used to live in Tobago, we left there in 1979 and moved to California , I miss allot of your different recipes as our mom made them for us...

    Adapted this recipe with vanilla essence and Angostura Bitters. Came out better than expected! The ginger really helps the Bitters not stand out. Gonna serve the snack to my Japanese co-workers tomorrow. Thanks for the demonstration! 👍

    These traditional classics beat these modern day machine made sweets by a looooong shot. Simple but so much more flavour and delight.. This one takes me back to primary school days when you used to hide and eat behind the desk then put on a straight face for de teacher. The one and only sugar cake.

    Thanks. I tried it a couple times. It works well, but I had to increase the water a bit and not reduce the sugar as much to keep it from being just crumbles in the end. Also, instead of mixed essence, I used vanilla, lime, and a bit of orange liqueur. It's not orthodox I know but it still brings back the memories and it tastes really good.

    hey you can also substitute the white sugar and use brown it gives this recipe much more flavor and also a nice colour ....grt video btw...i'm Trinidadian and i used to make that to sell we use the banana leaves to set it...

    How can you people keep saying he is wrong? I don't make sugar cakes like he does but at the same time I don't think everyone in Barbados makes sugar cake like me. Even if you people saying he is wrong are from Trinidad, like he is, he's allowed his own style. If food could only be prepared one way and taste one way, it would be a very boring and most of us would just eat to live.

    Wow! I have not had sugar cakes since I was a child. My grandmother used to make them. But hers was brown... She probably used brown sugar instead of white...
