Lima: Peru's food revolution - Street Food

  • Lima, the capital of Peru, is a sprawling metropolis of about 10 million people.
Known as the "city of kings", it was founded by the Spanish conquistadors in the 16th century and became an important centre of the Spanish empire in South America.
Over generations, people from around the world have settled in the vibrant city, resulting in a mix of cultures and cuisines.
Previously Lima was not much more than a transit point for tourists going to the ancient city of Cusco and the magnificent ruins of Machu Picchu. But the tourism industry has grown and tourists are spending more time and money in Lima's restaurants.
Peru's economy may be booming and the status of the nation's cuisine on the rise, but poverty is still rife. Gloria Villanueva Reyes is one of thousands of women working in Peru's many community kitchens providing the poor with food.
"I am proud that our food is now famous but I feel bad at the same time because there are too many people who don't have the chance to eat it. If it would reach everybody, happiness would be complete. Unfortunately, we only see those recipes on television," she says.
Peru is a country full of contradictions and it is struggling to define its modern self. But with the emergence of cooking schools across the country, many young Peruvians hope to be able to contribute to the new wave of Andean cuisine and create a new gastronomic future for their families and their country.
So are Peru's culinary traditions the key to a better future?
Editor's note: This film was first broadcast on Al Jazeera English in 2008.

I’ve travelled every country in South and Central America and Peru has by far the most refined cuisine and variety and in my experience it’s also the country where you are least likely to have a unsatisfying meal of all the places i’ve aten at on an international basis.

@texandrywallprefabricado2491 the food here is A-1,
Lima is the only city that concentrates the largest number of restaurants within the list of the 50 best in the world.
Currently in 2023, in Lima there are 4 restaurants that belong to the list of the best 50 in the world, .
One can come to Lima especially to eat every year and not get bored, the gastronomic offer is endless.
      It's 2023 and in Lima
@texandrywallprefabricado2491 Sorry, but in Peru we don't make tacos, we have so much of our own gastronomic offering that no one would venture to make "Peruvian style" tacos or Mexican food.
I only know two Mexican food restaurants and they are average, like fast food, nothing more than that.f you're right, the food here is A-1,

I lived in Lima for a year and a half, plus travel to both the jungle and the mountains. I have been to a few different countries and Peru probably has the best food. I know I will never find a potato as good as the ones I ate there every day. I love chewing the coca leaf too, but I worry that there will be drama over it if I try to get ahold of some in the United States.

Ox Bone there was no potato in Europe before the 1500's. Potato was introduced to Europe by the Europeans explorers that return from the new world. It has been determined that potato originated in Peru, we have more than 3500 varieties of it compared to no more than 10 found in Europe or North America. They have also found potatoes during excavations of ancient tombs, thousands of years old before the potato reached Europe , got it? Oh, and by the way, there was only 1 kind of dog present in Peru, native to this part of the world, what you see on the video are descendants of dogs brought here by Europeans along with cows, horses, pigs rats and disease.....

@@faustoruiz6146 In fact, there were a lot of native dogs in South America, but all of them were lost with the introduction of spanish war dogs. It's a very sad story, but nowadays we have the Viringo (Perro sin pelo peruano) and Chiribaya.

I think there is something ironic and disturbing about this episode. An anorexic lady hosting a food and travel show. I can sense her aversion to try the food and be adventurous in trying new food.

    Leviticus 11:
7 And the swine, though he divide the hoof, and be clovenfooted, yet he cheweth not the cud; he is unclean to you. 8 Of their flesh shall ye not eat, and their carcase shall ye not touch; they are unclean to you. 9 These
shall ye eat of all that are in the waters: whatsoever hath fins and
scales in the waters, in the seas, and in the rivers, them shall ye eat. 10 And
all that have not fins and scales in the seas, and in the rivers, of
all that move in the waters, and of any living thing which is in the
waters, they shall be an abomination unto you: 11 They shall be even an abomination unto you; ye shall not eat of their flesh, but ye shall have their carcases in abomination. 12 Whatsoever hath no fins nor scales in the waters, that shall be an abomination unto you.
    Isaiah 66:
15 For, behold, the Lord will come with fire, and with his chariots like a whirlwind, to render his anger with fury, and his rebuke with flames of fire. 16 For by fire and by his sword will the Lord plead with all flesh: and the slain of the Lord shall be many. 17 They
that sanctify themselves, and purify themselves in the gardens behind
one tree in the midst, eating swine's flesh, and the abomination, and
the mouse, shall be consumed together, saith the Lord.
