The pink stick is Hajikami, sort of ginger. It' is lightly marinated with rice vineger and served as a gernish. Sometimes you can see it in Japanese cuisine or fine dinings. (It's uncommon to be used in home cooked meals)

You eat only white part to make your mouth refresh after eating fish, just like gari (white or pink colored ginger)of sushi,then drink Japanese tea. Both have same as mouthwash effect . The pink part is kinda core of ginger, so it's too hard to eat. Visit Japan again! 👋
Mina i had eel sushi at restaurant in Colorado where they get there seafood from Japan. the eel tasted like a soft pillowy hunk of fried bacon....delicious! :P
